2 tb Olive Oil 3 To 4 Cloves Garlic, minced 3 cn Italian (plum) Tomatoes, -pureed in food processor -(28 oz each) 1/2 c Fresh Italian Parsley, -chopped 1/2 ts Oregano 1/2 ts Dried Basil Leaves 2 Bay Leaves Salt and Freshly Ground Pepper to taste In a 3 quart saucepan heat olive oil over medium heat. Add garlic and saute' 1 minute. Add tomatoes and remaining ingredients and simmer uncovered about 30 minutes. Remove bay leaves and store in refrigerator for future use. Kelly's Famous Lasagna
Lasagna Recipe
Ingredients:
1 lb. sweet Italian sausage
3/4 lb lean ground beef
1/2 cup minced onion
1 diced green pepper
2 cloves crushed garlic
1 (28 oz.) can crushed tomatoes
2 (6 oz.) cans tomato paste
2 (6.5 oz.) cans tomato sauce
1/2 cup water
2 tbsp white sugar
1.5 tsp dried basil
1 tsp Italian seasoning
1 tbsp salt
1/4 tsp ground black pepper
4 tbsp chopped fresh parsley
12 lasagna noodles
8 oz. ricotta cheese
8 oz. cottage cheese
1 egg
1/2 tsp salt
3/4 lb provolone
bag of shredded mozzarella (or slices)
3/4 cup Parmesan (optional)
Instructions:
Brown your Italian sausage & lean ground beef in a large pot. Cut up your onion, garlic, & green pepper, & add it to the meat mixture. Add your crushed tomatoes, tomato paste, tomato sauce, water, white sugar, dried basil, Italian seasoning, salt, ground black pepper, & half of your parsley. Stir thoroughly & let simmer for 1.5 hours.
To prepare your cheese mixture:
In a medium bowl add your ricotta cheese, cottage cheese, 1 egg, 1/4 tsp salt, & Parmesan & mix thoroughly. Set aside in the refrigerator.
About 20 minutes before your sauce is cooked, boil your 12 lasagna noodles for 8-10 minutes & rinse with cold water.
Preheat oven to 375º F
To organize your lasagna:
In a 9x13 inch casserole dish put 1.5 cups of your sauce on the bottom. Add 6 lasagna noodles in a row horizontally in your dish. Then add half of your cheese mixture. Then sprinkle half of your bag of mozzarella on top of your cheese mixture. Add another 1.5 cups of sauce & spread it out. Add 6 more noodles. Add the other half of your cheese mixture & spread evenly. Add the other half of your mozzarella cheese. Then place provolone slices covering the entire top of your lasagna. Cover with foil & bake in a 350º F oven for 25 minutes & then remove the foil & bake another 25 minutes or until the cheese is melted & is browned on top.
