Ingredients
1 lb chicken thighs, cubed
13 oz. Cajun andouille sausage (can sub Turkey sausage)
1 1/2 cups med-long grain rice
2 celery stalks, diced
1 green pepper, diced
1 yellow onion, diced
4 cloves minced garlic
1 Tbsp tomato paste
1/2cup crushed or diced tomatoes
28 oz. Chicken broth
1 Tbsp avocado oil
2 Tbsp all purpose seasoning
2 tsp garlic and herb seasoning
2 tsp Cajun seasoning
Green onions for garnish

Creamy Slow Cooker Sausage and Potatoes
In this video, I make a delicious slow cooker sausage and potato casserole. It has a wonderful creamy sauce and is the perfect comfort food.

You should find that this recipe will feed four to six people. Of course, this may vary depending on if you’re feeding big eaters or not.
Typically, you will not need many any extra side dishes to go with this casserole. I find that it is quite fulfilling by itself.
All the ingredients that you will need for this delicious recipe are right below.
500g (1.1 lb) smoked sausage, cut into 1cm (0.4 in) pieces
500g (1.1 lb) potatoes, cut in chunks
1 onion, sliced
2 tsp garlic, crushed
1 cup chicken stock
1 cup heavy cream
2 Tbsp Worcestershire sauce
2 tsp parsley, chopped
Thickener
3 Tbsp cornstarch
4 Tbsp water
You may need to adjust the thickening ingredients if you want the casserole to be runnier or thicker. The current quantities will make the sauce quite thick.
Bacon, carrots, and mushrooms are just some additional ingredients that you can add to this casserole. These will work perfectly with the sausage and creamy sauce.
I highly recommend that you use a smoked sausage such as Kielbasa, but other types will work well. I have tried this recipe using Italian sausage, and it is delicious.
Cheese is another addition that will work well in this dish. You might want to reduce the cornstarch slightly as the cheese will help thicken the sauce.
