How To make Lamb w/ Yoghurt, Coconut Milk &Amp; Almond Masala (Bad
1 ts Saffron threads 2 c Unflavored yoghurt
2 ts Caraway seeds 2 ts Salt
1/4 c Ghee (or melted butter) 4 ea 1 in stick of cinnamon
1/2 ts Cardamom seeds 6 ea Whole cloves
2 c Chopped onions 3 ea Cloves garlic, chopped
2 ts Chopped fresh ginger 1/2 ts Ground red chili pepper
2 c Coconut milk 3/4 c Boiling water
1/2 c Cold water
2 lb cubed lamb 1/2 c unsalted almonds Drop the
saffron threads into a small bowl or cup, add 1/3 of the boiling water and soak for at least 10 minutes. Pour the saffron and its soaking liquid into a deep bowl and stir in the yoghurt, caraway seeds and salt. Add the lamb and turn it about with a spoon until all the pieces are evenly coated. Marinate the lamb at room temperature for about 30 minutes. Meanwhile, combine the almonds and the rest of the boiling water in a bowl, and soak for 10 minutes. Pour the almonds and their soaking water into a blender and blend until you have a smooth paste. Set aside. In a heavy casserole, heat the ghee over moderate heat until fairly hot. Add the cinnamon, cardamom, and cloves, stir for a minute or so, then add the onions, garlic and ginger. Lifting and turning them constantly, fry for 7 to 8 minutes until the onions are soft and golden brown. With a slotted spoon, remove the lamb from the marinade, add the meat to the casserole, and stir over moderate heat until it browns evenly. Stir in the marinade and the cold water, then add the almond puree and red pepper and cook for 10 minutes stirring occasionally. Pour in the coconut mild, bring to a boil, and simmer partially covered for 20 minutes, or until the lamb is tender. To serve, discard the cinnamon and cloves, mound the lamb attractively on a deep heated platter, and pour the sauce over it. -----

Sometimes overlooked is the Tikka Masala curry, but despite being a mild curry it has tonnes of flavour and can be spiced up nicely. This is what's on the menu this time from my first book, Indian Restaurant Curry at Home Volume 1. The choice of main ingredient is up to you - feel free to use chicken, lamb, veg prawns etc. You can use raw chicken or pre-cooked, but lamb or beef must be pre-cooked beforehand. Tikka Masala doesn't always have to be a mild curry!

Here are the ingredients you'll be needing if cooking along. Please be careful with the salt - tandoori masala usually has salt in it.
• Oil or Ghee
• Cassia Bark or Cinnamon
• Ginger/Garlic Paste
• Mix Powder
• Garam Masala
• Tandoori Masala
• Chilli Powder (optional)
• Salt (use minimally as the tandoori masala powder usually has salt in it)
• Base Gravy, heated up
• Tomato Paste
• Red Food Colouring (optional)
• Your choice of main ingredient ... chicken tikka, chicken (raw or pre-cooked), pre-cooked lamb, veg, prawns etc.
• Fresh Lemon Juice
• Coconut Powder/Flour (it's ok to finely grind dessicated)
• Almond Powder/Ground Almonds
• Jaggery or Brown Sugar
• Single Cream
• Fresh Coriander Leaves, finely chopped
• Butter Ghee (optional)
• Flaked Almonds (optional)

How To Make Mutton Curry - How To Make Lamb Curry - Mutton Curry For Beginners
In this video I have explained step by step in detail how to make a mutton curry using basic common ingredients. If you master this recipe then you will be able to make any type of mutton curry.
Ingredients required for making mutton curry - serves 6 to 8
* 1.2 kg/ 3 lb mutton or lamb with/without bones. The shoulder and leg piece is the best.
* 500 gm/ 1 lb/ 3 large onions
* 40 gm/ 2 oz ginger
* 50 gm garlic / 1 whole head of garlic
* 2 green chillies (optional)
* 200 gm/ 7 oz/ 3/4th of a cup of plain unflavored yogurt
* 1 tablespoon Kashmiri red chilli powder. Please adjust proportion according to your preference.
* 1 teaspoon turmeric powder
* 1 tablespoon ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* 1 heaped teaspoon garam masala powder
* 2 dried bay leaves
* 4 to 5 green cardamoms
* 4 to 5 cloves
* 2 inch long cinnamon stick
* 2 teaspoons salt or as per taste
* 4 large potatoes cut into half (totally optional)
* hot water
* 3 to 4 tablespoons oil
Serve this with rice/roti/naan/paratha. The taste of any meat curry gets better the next day.
