Easy Lemon Poppyseed Muffins | Recipe makes TWO!
The perfect combination of sweet and tart, these tender muffins with a tart lemon glaze are perfect and there are just two of them! The perfect way to satisfy that muffin craving.

Ingredients:
1/2 cup all purpose flour
1/2 tsp baking powder
1/8 tsp salt
1/4 cup sugar
2 Tbsp melted butter
2 Tbsp beaten egg (not the whole egg)
1/8 tsp vanilla
1 Tbsp sour cream
1 Tbsp milk
1 Tbsp lemon juice
1/2 tsp lemon zest.
1 tsp poppy seeds
Lemon Glaze:
1/3 cup powdered sugar
1/2 tsp lemon juice
1/4 tsp vanilla.
Directions:
In a bowl, combine all dry ingredients and stir to combine.
Add in melted butter, egg, vanilla, sour cream, milk lemon juice and zest.
Mix just until incorporated and then add in poppyseeds. Don't overmix.
Spray muffin tin, just two of them.
Add in muffin batter. It will be full to the top, that is how you get a nice tall muffin.
Preheat oven to 425 degrees f.
Bake muffin for 5 minutes and then turn down the oven to 350 degrees F. Leave muffins in the oven.
Bake for another 11-12 minutes or until a toothpick comes out clean.
While they are baking mix up glaze:
Combine powdered sugar, lemon and vanilla extract to form a nice drizzling consistency.
Allow the muffins to cool for about 10 minutes and then drizzle with glaze.

Greek Yogurt Lemon Poppyseed Muffins
GREEK YOGURT LEMON POPPYSEED MUFFINS
These are our house muffins. That is, I make these all the time for my family no matter the time of year. This recipe is wonderfully flexible, you can swap out orange juice for lemon if you’d like, and you can add a glaze if you want them a little sweeter. These are great for the lunchbox, family brunches, taking to friends, or even stocking in your freezer.
Makes 1 dozen
¼ cup unsalted butter (1/2 stick of butter), at room temperature
¾ cup granulated sugar
1 cup full-fat Greek Yogurt
¾ cup Buttermilk
½ teaspoon salt
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 large egg
2 teaspoons baking soda
2 cups all-purpose flour
1 TBSP poppyseeds
Preheat the oven to 350 degrees F. Prepare a 12-cup muffin tin and set aside.
In a large mixing bowl, beat the butter and sugar until light and fluffy, about 2 minutes. Then, add the egg and mix well. With the mixer on low add the yogurt and buttermilk until just combined. Next add salt, vanilla, and lemon juice and mix until just combined.
In a small mixing bowl add the baking soda to the flour and whisk it together, then slowly add the flour mixture to the batter and mix until the batter forms and the flour is no longer visible. Once the batter is formed, fold in the poppyseeds.
Fill each muffin cup almost totally full so all the batter is used up.
Bake the muffins at 350 degrees for 25 minutes, or until they have risen and are golden brown on top, and a cake tester inserted into the center comes out clean.

Ingredients
2 tablespoons Lemon Zest, (zest from two lemons)
4 tablespoons Lemon Juice, (juice from two lemons)
1/2 cup Granulated Sugar
2 large Eggs
4 tablespoons Unsalted Butter, melted and at room temperature
1/4 cup Canola Oil
1 cup Milk
1 1/2 teaspoons Pure Vanilla Extract
2 1/2 cups All-Purpose Flour
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 tablespoon poppy seeds
1 tablespoon chia seeds
1. Preheat the oven to 425°F. Lightly spray a 12 cup muffin tin with non-stick spray, or line it with paper liners and set aside.
2. Zest your two lemons, then combine the sugar and lemon zest until the sugar is fragrant and light yellow in colour.
3. Add the lemon juice, eggs, melted butter, and oil and process until well combined. Add the milk and vanilla then set aside.
4. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, poppyseeds and chia seeds.
5. Make a well in the flour mixture, pour in the liquid mixture, and stir until just combined.
6. Scoop the muffin batter into the prepared muffin tin, dividing it between the 12 muffin cups
7. Bake for 5 minutes then lower the oven temperature to 350°F and continue baking for 14-17 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

These muffins are really yum & easy to prepare. These are actually my copycat recipe of the famous Woolworths muffins.
I was first introduced to these muffins via the Woolworths store & fell in love with them ever-since childhood. I get my sudden craving for these delicious treats & of course who doesn't love a good homemade muffin, especially if it leaves the home smelling like heaven.
The mix of poppy seeds with lemons just makes such a great combination.
I didn't add any toppings to my muffins but you may prepare a lemon zest icing & drizzle it over for a much richer muffin.
