You will need:
2 cups red lentils
1 medium-large yellow onion
1 clove garlic
1 tbsp grated fresh ginger
1 tsp salt
1 tsp cumin
2 tbsp olive oil

Ingredients:
1 large Onion, chopped
2 Celery stalks, chopped
2 medium Carrots, diced
2-3 Garlic crushed, crushed
2 tablespoons Olive oil
1 teaspoon Cumin
1 teaspoon Dried oregano
1 teaspoon Paprika
Salt to taste
Pepper to taste
1 can (14oz/400g) Diced tomatoes/chopped tomatoes
8 cups (2L) Vegetable stock
2 cups (380g) Dried lentils, rinsed
2-3 tablespoons Parsley/coriander, chopped
2 tablespoons Lemon juice, fresh
Directions:
1. In a large pot heat olive oil, add chopped onion and sauté for 6-7 minutes, until slightly golden. Add chopped celery and diced carrots, cook for 4-5 minutes, until tender. Add crushed garlic, cumin, dried oregano, paprika and cook, stirring for 1 minutes.
2. Add minced/chopped tomatoes and cook for 1-2 minutes.
3. Add rinsed lentils, vegetable stock, salt and pepper. Bring to a boil over high heat, then, reduce the heat to low, cover with a lid, and simmer for 30-45 minutes. Check the seasoning and add salt/pepper if needed.
4. Add chopped coriander/parsley, lemon juice, give a quick stir and turn the heat off.
5. Serve!

Lentil macaroni soup ????
This lentil macaroni soup is so hearty and so filling and really great for iftar. I’ve adapted it from my Moroccan harira soup for a meat free version. Just throw all ingredients in a bowl and it’s ready in 30 minutes.
Ingredients:
1 onion chopped
2 cloves garlic minced
1/4 chopped green onions
1 carrot chopped
1 tomato chopped
3 tbsp tomato paste
1/2 cup brown lentils washed & soaked
1/2-3/4 cup very small size macaroni
1/4 cup chopped coriander
1/4 cup chopped parsley
1 vegetable stock cube
1 tsp cumin powder
1 tsp paprika powder
Chilli flakes(optional)
Salt & pepper
(All quantities can be adjusted according to taste)
1. In a pot, heat 2 tbsp olive oil and sauté the onion and garlic for 2 minutes. Add carrot and green onion and sauté. Add in tomato, tomato paste, lentils and sauté for another 2 minutes. Finally add in macaroni, coriander, parsley along with 6-7 cups water. Stir, cover and let simmer the soup for 20 minutes until pasta is cooked.
2. Garnish with coriander, fried brown onions and lemon juice. Serve hot with toasted bread.

Pasta e Lenticchie otherwise known as Italian Lentil Soup, made with added pasta. This is a traditional, rustic, healthy and delicious soup and it is very easy to make. Growing up as a child, this dish was served often, and why not? It is loaded with nutrients and is comfort food as well. Hope you give it a try. - this particular version is my own recipe :) Enjoy!!

Ivo’s “Pasta e Lenticchie” (Italian Lentil Soup)
Ingredients:
• 4 – 5 TBSP extra Virgin Olive Oil (EVOO)
• 1 garlic clove, minced
• 50 gm pancetta, diced (alternate use prosciutto) (vegetarian version, just omit)
• 1 celery stock diced (i.e. 1 celery rib) (~2/3- 3/4 cup)
• 1 medium sized sweet onion, sliced/diced (~1 cup or more)
• 1 carrot sliced/diced (~3/4 - 1 cup)
• 1 sweet potato diced into ½ inch cubes (` 2 cups) (alternate, use regular white, yellow or red potato)
• 1 cup of green (or brown) lentils, washed
• 100 gm – 125 gm small pasta, such as “capellini spezzati” or elbows, or tubettini, etc.,
• 3 liters turkey broth (alternate, chicken, or vegetable broth – or just plain water)
• Salt to taste
Process:
• Add EVOO to a pot and add garlic – sauté for 30 seconds on med heat
• Then add the diced pancetta, celery, onion, carrot, and potato. Sauté for 10 – 15 mins till softened a bit, stirring occasionally.
• Add the lentils, mix, and continue to sauté for 1 – 2 minutes
• Add 3 liters of broth, bring to a boil, then continue to boil for 30 minutes (up to 40 minutes)
• Add the pasta and cook for a duration as noted on the pasta package (typically under 10 minutes)
• Add salt to tase (important to add salt to taste at the end, as this will ensure you will have soft/cooked lentils) (I suggest adding ~1 TSP salt)
