How to Make Nanny's Pasta e Fagioli (Italian Pasta and bean soup)

Recipe: Pasta e Fagioli
2 - 19 oz. cans of Progresso Cannellini Beans
1 - 28 oz. can of tomatoes of choice (puree, peeled tomatoes, crushed tomatoes, tomato sauce) – I use tomato sauce or puree
6 cloves of garlic sliced
6-8 basil leaves
1 lb. of small pasta (Ditalini, Elbows, Small Shells)
¼ cup of oil of choice (extra virgin olive oil, canola oil)
1/4 lb. Pancetta or Prosciutto (optional)
Salt to taste
Pepperoncini (optional)
Grated cheese (parmesan, Reggiano, Locatelli)
Saute garlic and basil (add pepperoncini if using) in oil for a few minutes until the garlic sizzles. Add tomatoes and beans. Simmer for about 15 minutes.
Meanwhile, cook the pasta in a pot of salted water until they are al dente. When pasta is done, drain off most of the cooking water saving about two cups, and place in a large serving bowl. I like the pasta e fagioli more liquidy and not thick. If you like it thick, do not add the extra pasta water.
Add a good part of the fagioli sauce to the pasta leaving some to top off each of the bowls. The recipe should serve 6-8 people with just a normal size portion. Sprinkle with grated cheese.

Salad 2 Ways
A colorful and refreshing bean and corn salad. It’s really easy to prepare so it’s perfect for chucking into a box and taking to work, out for a picnic or bbq or just for something quick at home. And it only gets better as it sits, so it’s the perfect make-ahead dish.
Prep time: 20 mins
Cook time: 15 mins
Number of servings: 3-4 persons
Ingredients
For Corn & Redbean Salad
Rajma Bean - 1/2 Cup
Cooked Corn Kernels - 1 Cup
Onion
Green Capsicum
Green Chili
Cherry Tomato
Coriander Leaves
For Salad Dressing
Juice Of 1 Lemon
Extra Virgin Olive Oil - 1 Tbsp
Honey - 1 Tbsp
Salt
Pepper
Method
1. To make the salad dressing, mix lemon juice with olive oil, honey, salt and pepper. Keep this aside
2. Soak the rajma beans overnight and pressure cook them and let them come to a room temperature
3. In a large mixing bowl, add the cooked and cooled rajma beans, cooked corn kernels, onions, green capsicums, green chilies, cherry tomatoes, and coriander leaves.
4. Add the salad dressing on top of the salad and mix everything well
5. You can serve the salad as it is or chilled
For Macaroni Salad
This is a classic, tasty, and oh-so easy macaroni salad recipe! Made with classic ingredient staples including celery, red pepper, and onion and dressed up in a simple creamy mayo-based dressing, this is guaranteed to be a hit at every cookout and potluck this year!

Cook time: 15 mins

Ingredients
Macaroni Shells - 1 Cup
Onion
Red Capsicum
Celery
Cherry Tomato
Coriander Leaves
For Salad Dressing
Mayonnaise - 2 Tbsp
Vinegar - 3 Tsp
Mustard - 1 Tsp
Italian Seasoning - 1/4 Tsp (Optional)
Chili Flakes - 1 Tsp
Garlic Powder - 1/4 Tsp
Pepper
Salt
Method
1. For the salad dressing, mix mayonnaise, vinegar, mustard, italian seasoning, chili flakes, garlic powder, salt and pepper
2. Cook the macaroni shells and bring it to a room temperature
3. In a large mixing bowl, add the cooked and cooled macaroni shells, onions, red capsicum, celery, cherry tomatoes and coriander leaves
4. Add the salad dressing on top of the salad and mix everything well
5. You can serve the salad as it is or chilled

RECIPE: Pasta, Bean and Vegetable Soup
INGREDIENTS:
1/2 pound (about 1 cup) blackeye peas, dried
8 cups water (plus water for soaking)
8 teaspoons chicken broth/seasoning, powdered (vegan or regular)
3 cups onion, chopped
2 teaspoons garlic, minced
1 cup celery, chopped
1 cup red bell pepper, chopped
14.5 ounce can tomatoes, diced
1 cup pasta, tiny shapes
1/2 - 1 teaspoon Kosher salt (to taste)
1/2 - 1 teaspoon ground pepper (to taste)
INSTRUCTIONS:
1: Sort and rinse the beans. Remove any rocks or debris. Soak the beans overnight (6 - 8 hours) in about 6 cups of cold water.
2: Drain and rinse the soaked beans.
3: To a large pot add 8 cups water, chicken seasoning and the soaked beans. Bring to a boil.
4: Add the onion, garlic, celery, and red bell pepper. Return to a boil.
5: Reduce the heat to a simmer. Cover and simmer for 60 minutes or until the beans are a soft as you like them.
6: Stir in the tomatoes, pasta, salt and pepper.
7: Simmer the soup uncovered until the pasta is cooked to desired tenderness (see pasta package for cooking time). Stir occasionally while it is simmering.
NOTES:
You can use 8 cups liquid chicken broth in place of the powdered /broth/seasoning and water. I
prefer using a vegan chicken broth seasoning and water for this recipe. It does not have any added preservatives or unhealthy ingredients. You can also adjust the amount of seasoning and/or water separately to your taste.
I often use Ditalini pasta for this soup. Ditalini is a very small type of tube shaped pasta. You can use any small sized pasta for this recipe.
Adjust the ingredients to your taste.
