8 Medium sized potatoes
1 c Sour cream
8 oz Cream cheese, softened
4 tb Butter
1/3 c Chives, chopped
Salt and pepper to taste Additional butter Paprika Boil peeled potatoes until tender. Beat sour cream and cream cheese together. Add hot potatoes and beat until smooth. Add butter, chives, salt and pepper to taste. Place in greased two quart casserole. Dot with butter and sprinkle paprika on top. Bake at 350 degrees for 25 minutes. Serves 8-10.NOTE****this recipe can be made the day before dinner and refrigerated in crock-pot. Then, on the serving day, just turn on crock-pot at low setting and cook potatoes for about 2-3 hours, to be ready when the rest of the dinner is ready.

Our favorite thing about this recipe is (of course) how easy it is. With all of the meal planning, perfect timing and entertaining guests, we LOVE that this can be made the night before, letting all the flavors soak in and combine together overnight. Then on Thanksgiving, all you have to do is pop in the oven for a quick reheat. There's always the option to serve immediately as well.

Make-Ahead Mashed Potatoes - These Delicious and Creamy Mashed Potatoes are a tasty side dish everyone will love. Prep in 30 min, ready in an hour! So Delish! ⬇️⬇️⬇️ ????CLICK FOR RECIPE???? ⬇️⬇️⬇️
❇️ Ingredients ❇️
3 Pounds Russet or Yukon Gold Potatoes
5 Quarts Cold Water
2 Tablespoons Kosher Salt
1/2 Cup of Salted Butter (1 Stick) + 3 Tablespoons to top
4 Ounces Sour Cream
1/4 Teaspoon Ground Black Pepper
❇️ Recipe Instructions ❇️
1️⃣ Peel and Dice Potatoes. Dice potatoes into equally sized ½ inch pieces and put them into 5 quarts of cold water.
2️⃣ Boil Potatoes. Boil diced potatoes until fork tender.
3️⃣ Drain Potatoes. Drain the potatoes into a colander and put them back into the empty pot.
4️⃣ Add Butter and Sour Cream. Add Butter and Sour Cream.
5️⃣ Mash and Adjust Seasonings. Mash the potatoes until they are smooth and creamy. Do a taste test and then adjust seasonings. Do not add salt without tasting the mashed potatoes first. The potatoes will have absorbed enough salt from the water during the cooking process and no more salt will need to be added. Add fresh ground pepper to taste.
6️⃣ Top with Butter and Serve. Transfer finished mashed potatoes into a serving dish and top with 3 Tablespoons of Butter. Serve immediately.
