2 qt Water
2 Celery stalks; chopped
1 md Onion; chopped
2 Carrots; chopped
1 Cl Garlic; minced
1 Bay leaf
1/4 ts Thyme
1/2 c Red wine
1 cn Plum tomatoes
Recipe by: Elizabeth Powell Preparation Time: 2:00 In a large soup kettle, combine all ingredients except wine and tomatoes. Bring to a boil and simmer, over low heat for 1-1/2 hours. Add wine and tomatoes and simmer 20-30 minutes more.

What I used - Makes 6 good sized bowls of soup
200g (7 oz) Smoked bacon lardons (or 8 rashers chopped up)
2 Medium onions peeled & roughly chopped
Half a swede peeled & chopped
2 Medium carrots peeled & chopped
200g (7 oz) Split red lentils (rinsed a few times in cold water)
1 Tablespoon of rosemary (optional)
2.6 pints (1.5 Litres) of Vegetable or chicken stock
Salt & Pepper to taste

Curry lentil soup is an easy and tasty one-pot recipe where earthy lentils are simmered in a delicious curry sauce with spices, tomatoes, and vegetables.
⭐️ INGREDIENTS
2 tablespoons olive oil
1 large onion chopped
2 carrots cut into discs
3 cloves garlic grated
1 teaspoon ginger grated
2 teaspoons curry powder
1 teaspoon turmeric powder
1 teaspoon ground cumin
¼ teaspoon red pepper flakes, more or less to taste
5 - 6 cups vegetable broth
1 can (15 ounces) crushed tomatoes
1 cup dry lentils, green or brown
1 pound potatoes peeled and cut into bite-size chunks
5 ounces kale or spinach, chopped
1 teaspoon salt or more to taste
2 twists of black pepper
1 lime optional, to squeeze on top
