INGREDIENTS: Lentil and Rice Recipe inspired by Lebanese Mujadara ????????
* 2 & 1/2 cups long grain jasmine or basmati rice
* 2 & 1/2 cups green, or brown lentils, or combo of the two
* Water for boiling lentils (must be 2”above lentils in the pot)
* Salt to taste, (1 tsp for this recipe)
* 1 tsp vegetable bouillon
* 1 large onion (sweet, white, yellow, or red onion) may substitute with 6 - 8 shallots. Slice onion thinly and fry till golden brown and crispy
* 1 cup cooking olive oil for frying onion (then reserve at least 4 tbsp for rest of recipe)
* Spices : 1/4 tsp cumin, 1/4 tsp fenugreek, 1/2 tsp curry powder, 1 small cinnamon stick.
* 1 clove of garlic
* Optional chopped parsley for garnish
Recipe:
Start by boiling washed lentils in water, on medium heat, for 15 mins, or until al dente.
Add salt, bouillon, washed rice, and cinnamon stick. Keep boiling on medium low for 5 mins without lid.
Fry onions in oil till crispy, crunchy, caramelized, and golden brown.
In a skillet, toast fenugreek, cumin, curry powder, grated or minced garlic for under 30 seconds, on medium low, then add to rice and lentils, and stir to combine.
Place lid on, and turn heat to low, and cook for 30 mins, or until rice is tender, and fluffy.
Fold in crispy fried onions, garnish with parsley, and serve as a side dish.

Lentils and rice cooked together with herbs and spices, topped with caramelized onions, fresh parsley, and lemon.
Here is what you'll need!
Lentils and Rice with Caramelized Onions
Servings: 4-5
INGREDIENTS
Caramelized Onions
1 medium red onion, thinly sliced
1 tablespoon of olive oil
Lentils and Rice
½ medium red onion, diced
2 cloves of garlic, minced
1 tablespoon olive oil
1 cup green lentils
1 cup long grain rice
1 teaspoon salt
1 teaspoon cumin
½ teaspoon cinnamon
1 bay leaf
For Serving
1 bunch fresh parsley
1 lemon
½ cup Greek yogurt
PREPARATION
1. Heat a tablespoon of olive oil over low heat and add the onion slices, stirring occasionally until completely soft, dark brown, and caramelized. This will take about 30 minutes. The onions should become very dark and tacky when finished. Stir often to avoid burning.
2. In a large pot, sauté the diced red onion and minced garlic in 1 tablespoon of olive oil until translucent, about 5 minutes.
3. Add 3.5 cups of water, the salt, and the green lentils to the large pot. Bring to a boil, then cover with lid and simmer for 10 minutes.
4. Add the rice, cumin, cinnamon, and bayleaf to the lentils. Stir and cook covered for about 15 minutes, or until rice is cooked.
5. Serve lentils and rice topped with the caramelized onions, chopped fresh parsley, lemon wedges, and Greek yogurt if desired.

In this video, we show you a delicious Mujadara Recipe. Mujadara is a very famous Middle Eastern Rice and Lentils dish with Caramelised Onions. This Mujadara Recipe is very easy to make and absolutely delicious. Mujaddara can be served on it's own with a side of salad and a yogurt dip. The Caramelized Onions are really what take this Mujadara Recipe to another level of deliciousness!
For the Mujadara Recipe, you will need:
1 and 1/2 cup rice (soaked for 20 minutes)
1 cup brown lentils (soaked for 20 minutes)
1/2 cup olive oil
2 medium-sized onions finely sliced
1 cinnamon stick
salt to taste
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp chili powder
1/2 tsp turmeric powder
1/4 tsp black pepper
4 cups water (including the reserved water from boiling the lentils)
1 tbs vinegar
fresh lemon juice
optional: pine nuts and fresh coriander for garnishing
