How To make Lime Delicious Cheesecake
1 1/4 c zwieback toast crumbs
1/3 c margarine, melted
1/4 c cold water
3 ea large eggs, separated
1 1/2 ts grated lime peel
2 c thawed whipped topping
2 tb sugar
1 ea env. unflavored gelatin
1/4 c lime juice
1/2 c sugar
16 oz light neufchatel cheese,soft
Combine crumbs, sugar and margarine; press onto bottom of 9-inch spring- form pan. Bake at 325 degrees F., 10 minutes. Cool. Soften gelatin in water, stir over low heat until dissolved. Add juice, egg yolks, 1/4 c sugar and peel; cook, stirring constantly, over medium heat 5 minutes. Cool. Gradually add gelatin mixture to the softened Light Neufchatel cheese, mixing at medium speed on electric mixer, until well blended. Stir in a few drops of green food coloring, if desired. Beat egg whites until foamy; gradually add remaining sugar, beating until stiff peaks form Fold egg whites and whipped topping into neufchatel cheese mixture, pour over crust. Chill until firm. Lime Cheesecake

Add the cream cheese into your mixer bowl. Set up your mixer at medium speed, and pour the sugar. Add the egg, and pour the lime juice, and vanilla extract.
Mix everything until you obtain a smooth mixture.
Preheat the oven to 360°F/180°C.
Place the biscuits in the blender and crush them. Add them in a bowl, and pour the melted butter over them. Mix until the butter is absorbed into the biscuits. Refrigerate for the next 3 hours.
Grab a round cake tin and grease its bottom with butter. Add the crushed biscuits and evenly spread them into the pan. Press the biscuits with your hands until you evenly level them. Pour the wet mixture over the levelled biscuits and bake it for 15 minutes.
Don’t turn off the heat when it’s ready, but increase it to 400°/200°C.
In the meantime, add the egg whites in your mixer bowl, set it up over medium speed. Pour the sugar and mix until the mixture reaches stiff peaks.
Evenly spread it on top of the cake. Slide it into the oven again, and cook it for the next 10 minutes. Shred a touch of lime zest on top before serving.

Ginger Lime Cheesecake recipe with a graham cracker crust. This baked cheesecake recipe is creamy and delicious. Its a sweet little Saint Patrick's dessert when you decorate it with some greens or as I did a green buttercream Shamrock. The candied Ginger surprise inside makes this special and the Lime glaze gives it an extra bit of sweetness and contrast. I love the classic graham cracker crust but you can use any type of crushed cookies mixed with just enough butter to hold it together.

EASY No Bake Key Lime Cheesecake | The Recipe Rebel
This easy Key Lime Cheesecake is a simple, no bake dessert that is perfect for Spring! It’s sweet, tangy, creamy and so luscious! Made with fresh lime juice and zest.

Ingredients
Crust:
2 1/2 cups graham crumbs (390g)
1/2 cup melted unsalted butter
Filling:
3 packages cream cheese room temperature (24oz/750g)
1 1/2-2 cups powdered sugar (200-263g)
1/4 cup key lime or lime juice (2 limes)
1 tablespoon key lime or lime zest (1 lime)
1 teaspoon vanilla
3/4 cup heavy whipping cream cold, 30-35% fat ONLY
Instructions
Combine graham crumbs and butter and press firmly into the bottom of an 8 or 9 springform pan and about 1 up the sides.
In a large bowl, beat cream cheese with an electric mixer until smooth.
Add 1 1/2 cups sugar, lime juice, lime zest and vanilla and beat until smooth.
Add cream and beat on low until incorporated, then beat on high until thickened and fluffy (don't stop until you have stiff peaks -- this will take a several minutes on high speed!). Taste and adjust sugar as desired.
Spread into prepared pan, cover and refrigerate for at least 5-6 hours or until firm. Slice and serve with sweetened whipped cream as desired.
