Healthy Easy Turkey Lasagna Recipe
Hi guys, and welcome to my kitchen! Today we will be making my famous turkey lasagna that everyone loves! I hope you love it too. Let's get into cooking!
Ingredients:
For turkey meat sauce:
2 lbs ground turkey
1 medium onion, chopped
4 cloves of garlic, chopped
½ each red and green bell peppers, chopped
1 tbpn basil paste, or fresh basil
1 tspn red chili flakes
1 tspn black pepper
1 tspn parsley flakes
1 tspn garlic powder
Salt (to taste)
2 big cans of crushed tomatoes
Ricotta cheese filling:
32 oz. ricotta cheese
1 egg
2 tbspn whole milk
1 tspn red chili flakes
1 tspn black pepper
1 tspn parsley flakes
1 tspn garlic powder
Salt (to taste)
Oven-ready lasagna sheets
Mozzarella cheese
Parmesan cheese
Method:
1. In a deep pot, add olive oil. Once oil is hot, add in the ground turkey meat and let cook till all its natural juices have evaporated and the meat starts to brown.
2. Now add in the chopped onion/garlic, mix well. Then add the peppers and mix again till everything is well incorporated.
3. Add all the seasonings listed above for the sauce and mix well. Let cook for 5 mins.
4. Now add the crushed tomatoes and lower the heat so the sauce can simmer. In the meantime, add more of the dry seasonings to adjust the taste of the sauce. The tomatoes will add an acidity that we want to balance out with the additional seasonings.
5. Cover and let the sauce cook for 1-1/2 hour. Mix every 20-30 mins so it does not stick to the bottom of the pot.
6. In a large bowl, add ricotta cheese, as well as the rest of the ingredients listed above under the filling section. Mix well and let sit in the fridge so the flavors can really come together.
7. After an hour or so, the sauce will be done. You will notice that it has reduced quite a bit, but that is exactly what we are looking for.
8. Before assembling the lasagna, preheat the oven to 350*F. In a 9”x13” baking pan, put a few ladles of the sauce at the bottom, and then top it with the oven-ready lasagna sheets, followed by the ricotta mixture, a few sprinkles of mozzarella cheese, and repeat the process till you have used all the lasagna sheets in the box.
9. Top everything with some Parmesan cheese, and the rest of the mozzarella cheese. I also sprinkled more dried parsley (optional).
10. Bake in the oven for 40-45 mins until the edges start to look brown.
11. Take out of the oven and let sit for at least 20 mins before cutting into it, otherwise it can easily fall apart. This step is crucial!
12. The lasagna is all done! Serve this with your favorite salad, or just on its own.

???? 2 to 3 eggplants (about 1 ½ pounds), sliced lengthwise into ½-inch thick slices (about 12 slices)
???? Extra virgin olive oil

Who doesn’t love a good lasagna? But between the red meat, rich sauce and fattening cheese, it can do a number on your digestive system, so just changing a few items, you can reduce the fat content, sodium and calories and still make it taste good. I even added a heart-healthy vegetable!
Ingredients:
1 lb. ground turkey
1 small onion diced
5 garlic cloves chopped
¼ cup dried Italian seasoning
16 oz. box lasagna noodles (or wheat)
6 oz. bag spinach (fresh)
2 cups reduced fat mozzarella (shredded)
1 cup reduced fat cheddar (shredded)
24 oz. del monte traditional spaghetti sauce
Salt and pepper (to taste)
Prep time: 45 min.
Cook time: 55 min.
Cooking Instructions:
-Cook lasagna noodles according to package directions. Set aside.
-In a deep skillet, add the chopped garlic, diced onion and ground turkey. Cook until well done.
-Add Italian seasoning and spaghetti sauce, cover and let simmer on medium low for about 10 min. Add salt and pepper to taste.
-Meanwhile, mix your shredded cheddar and mozzarella together. Wash spinach if needed.
-Turn off heat from your meat sauce.
-In a 13x9 rectangle pan, start layering your ingredients: meat sauce (on bottom), cheese, spinach (as much as desired) and pasta.
-Make sure pasta is on top and cover with remaining cheese.
-Bake in oven at 375° for 30 minutes.
