How To make Malaysian Satay with Dipping Sauce
3 lb Squid, cleaned and cut into
-rings 1 tb Cumin seeds
2 tb Coriander seeds
3 sm Dried hot peppers
2 tb Thai fish sauce
2 tb Lime juice
1 tb Brown sugar
2 tb Peanut oil
2 tb Chopped garlic
2 tb Chopped ginger
2 tb Chopped hot chile peppers,
-seeds and all 3 tb Lime juice
1/4 c Thai fish sauce
2 ts Sugar
1 tb Chili oil
1/4 c Roasted peanuts, ground to
-a coarse paste 1/4 c Finely minced coriander
-leaves Here's one for all the Satay freaks out there. From an article on Asian snacks by Bruce Cost in the San Francisco Chronicle, 7/20/88. Thread the squid rings and tentacles (through the fleshy part) on bamboo skewers, leaving about 3 inches for a handle. Wrap the handle in aluminum foil (or soak skewers for 1 hour in water before using.) Combine cumin, coriander and hot peppers. Toast in a dry skillet until fragrant; grind go a powder. Mix well with fish sauce, lime juice and brown sugar. Add squid, marinate on a tray for 30 minutes, turning from time to time. Meanwhile, get a hot fire going on a grill, and make a dip sauce by combining remaining ingredients. Grill squid for about 90 seconds on each side. Serve with dipping sauce on the side. Ing:
2 lbs chicken tenders
1st marination:
2 tbsp fresh ginger and garlic
1 tsp chili garlic sauce
1/2 tsp salt
1 tsp lemon pepper
Marinate the chicken for about 20 minutes
Peanut Dipping Sauce Ing:
2 tbsp panut butter
3 tsp coconut cream
1 tsp chili garlic sauce
1/4 tsp fresh ginger and garlic
1 tbsp concentrated temarind
1 tsp cajun seasoning
1 tsp apple cider vinegar
2nd marination:
6 oz thick coconut cream minus 3 tbsp that will be used in the peanut sauce
1 tbsp cumin powder
1 tbsp coriander powder
1 tsp black powder
1/2 tsp turmeric
1/2 tsp salt
bamboo skewers (soaked in water for 20 minutes)
Metod:
Mix all the sauce with the above ingredients and keep aside.
Once the twenty minutes are up, flatten the chicken, cut in long strips then follow the method shown in the video add the chicken marination in the chicken and mix really well, cut the long strips and then mix the coconut cream, cumin powder, coriander powder, black powder and turmeric, mix the really well then put the chicken in this sauce, let the chicken marinate for about 30 minutes before you skewer the chicken onto the bamboo sticks and grill or bake the chicken in the oven.
Can be baked in the oven at 400 degrees F or can be grilled indoors or outdoors

Chicken Satay | Malaysian Skewered Meat Satay [Nyonya Cooking]

Chicken satay refers to grilled skewered chicken served with flavourful peanut sauce and is distinctively delicious. In Malaysia and Singapore, it is known as 'satay' whereas in Indonesia, it is called 'sate' although it carries the same meaning.
Chicken satay is a famous dish in Southeast Asia especially in Malaysia, Indonesia and Singapore. Even Thailand has its own version. Chicken satay or sate as it is also known had become increasingly popular as it was brought to many countries by the migrants. Perhaps, that explains why it is one of the more well-known dishes from Southeast Asia. Authentic satay usually uses chicken or beef. The meat is marinated and then grilled over a charcoal fire. The fragrant aroma during the grilling process would set your stomach growling and resisting them would be unbearable.
### Chicken satay marinade
The marinade for chicken satay is very simple to prepare. It consists of several types of spices and herbs which are mixed together. Turmeric plays an important role here for its colour and flavour. Instead of using turmeric powder, fresh turmeric may also be used. The marinade also contains a bit of sugar, hence ‘gula melaka’, a type of palm sugar is added instead of white sugar. It gives a hint of toffee flavour besides contributing sweetness to the marinade.
### Type of chicken meat for satay
In the video, I used chicken breast. It does not have bones and is very easy to work with. However, chicken breast might be too dry if it is over cooked. I'd recommend chicken thighs if you want to make succulent chicken satay. Keep some fats and skin on the skewer for best flavours.
### Grilling satay on a grill pan
Chicken satay or any types of satay for that matter is best grilled on a charcoal grill. However, if that is not possible, a grill pan is not that bad of an idea. Give it a try making them in your kitchen. Just before grilling, preheat the pan at medium to high heat for 5 minutes. The grill pan has to be really hot for the meat to sizzle as it is laid on the pan. While grilling, brush some oil onto the meat with a bruised lemongrass for absolute fragrance.
### Make chicken satay in advance
I enjoy making these for parties because chicken satay can be prepared days or weeks ahead. You may choose the meat of the thigh or chicken breast, according to your preference. Mix the chicken slices with the marinade as shown in the video. Once well mixed, they can be kept in the refrigerator for one to two days. Otherwise, the marinated meat has to be frozen. It should be removed from the freezer and allow to thaw before grilling. It would still turn out perfect.
Always serve satay together with [compressed rice ‘nasi impit’]( some raw onions slices, cucumber and of course, the extremely flavourful [satay peanut sauce]( for a wholesome meal.

CHICKEN SATAY RECIPE | SATAY CHICKEN | CHICKEN SATAY WITH PEANUT SAUCE
Chicken Satay Recipe | Satay Chicken | How To Make Chicken Satay | Chicken Satay with Peanut Sauce | Satay Chicken Recipe
Ingredients for Chicken Satay:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Boneless Chicken - 450 gms (1 lb)
Marinade, coarsely blended or crushed :
- Shallots- 6 small (total around 35 gms)
- Garlic cloves- 4-5 (5 gms)
- Lemon grass, sliced- 2 stalks, white portion (2 tbsp, around 10 gms)
- Turmeric Powder- 1.50 tsp (1.25 tsp if using white sugar instead of brown sugar in the marinade)
- Coriander Powder- 1 tsp
- Red Chilli Powder- 1 tsp
- Salt- 1.5 tsp
- Brown Sugar- 1.5 tbsp
- Oil-3 tbsp
(use 2.5 tbsp of this marinade for 450 gms- 1 lb of chicken)
Peanut Dipping Sauce for Satay:
- Peanut butter (crunchy)- 3 tbsp
- Soy sauce ,low sodium-2.5 tsp
- Sriracha Sauce-3 tsp (Or any other readymade Chilli Garlic Sauce)
- Brown sugar-3 tsp
- Lemon Juice- 1.25 tbsp
- Grated ginger- 1 tsp
- Chopped garlic -1 clove very finely chopped
- Coconut milk-3 tsp
- Water -3 tbsp
Wooden Skewers- around 6
Preparation:
- Cut the chicken boneless fillets into 1” bite sized pieces. The pieces should be flat and not very thick.
- Peel the shallots & garlic and slice the white portion of two lemon grass stalks.
- Now to prepare the marinade, add all the items into a blender/mixer jar and blend it into a coarse mixture.
- Alternatively you can also use a mortar & pestle to crush these roughly.
- Take out 2.5 tbsp of this mixture and add it into the chicken pieces. Mix well and set aside for 2-3 hrs to marinate.
- To prepare the Peanut Sauce, easiest way is to use readymade Peanut Butter (crunchy variety).
- To make this sauce, grate a piece of peeled ginger and finely chop one garlic clove. You can use readymade Sriracha Sauce or any other readymade or home-made Chilli Garlic Sauce.
- Add all the items in a bowl and whisk it till smooth.
Process:
- Skewer the marinated chicken pieces on a Kebab stick or small wooden skewer 4 at a time.
- Once done, preheat a Grill pan and brush it with oil.
- Now place the skewers side by side 3-4 at a time.
- Grill on one side on medium high heat for 3 mins and then flip. Repeat on the other side for another 3 mins.
- Now turn the skewers again and baste the pieces with oil. Reduce heat to low and grill it for 3 more mins.
- Flip again and baste with oil on the other side.
- Continue to grill on low heat for another 3 mins till the meat is tender.
- Serve hot with Peanut Sauce and some sliced cucumber.
