SPRING IS HERE!
I am so very happy about that!
And with spring comes Easter & it is one of my very favorite times of year.
If you are looking for a dessert recipe, maybe something new for Easter dinner, you've come to the right place!
I am sharing 2 cakes that I made recently that started with a box cake mix.
Both are poke cakes, but are unique & so very delicious!
We loved them both & I plan to make them again soon.
Lastly, I made a blueberry cobbler that was oh so delish!
ORANGE CREAMSICLE CAKE
1 white cake mix (also eggs & oil as recommended on the box)
1 cup orange juice (in place of the water called for on the box)
1 3 oz package orange jello
3/4 cup boiling water
¼ cup cold water
1 15 oz can mandarin oranges, drained
1 8 oz package whipped topping
1 to 1 1/2 cups powdered sugar
1 tsp vanilla
Optional topping: mandarin orange slices (a whole can of undrained mandarin oranges may be used, or reserve 12 segments from the can for the topping)
Preheat the oven to 350 degrees.
Spray 9X13-inch baking pan with non-stick baking spray.
Beat together the white cake mix along with the eggs and oil recommended on the box.
Use 1 cup of orange juice in place of the water called for.
Pour the cake batter into the pan and bake it for the time recommended on the box.
Allow the cake to cool for at least 10 minutes.
Use a fork, toothpick, skewer, or the rounded end of a wooden spoon to poke holes all over the cake.
Stir the orange jello in the boiling water until completely dissolved.
Stir in the cold water.
Pour this jello mixture over the cake allowing it to fill the holes.
Place this into the fridge for at least 2 hours.
In a mixing bowl, fold together the whipped topping, powdered sugar, vanilla, & the drained mandarin oranges. Spread this mixture all over the cake and return to the fridge until ready to serve.
ELVIS PRESLEY CAKE
1 white cake mix (also eggs, water, & oil as recommended on the box)
1 8 oz can crushed pineapple with juice (do not drain)
1 cup granulated sugar
1 stick butter, softened
8 oz cream cheese, softened
1 teaspoon vanilla
3 cups powdered sugar
1 cup chopped pecans
Prepare cake mix according to box directions.
Bake in a 9 x 13 baking pan, sprayed with non-stick spray, according to time recommended on the box.
Cool for 10 minutes.
Heat the crushed pineapple, juice & sugar on stovetop just until sugar is dissolved.
Use a fork, toothpick, skewer, or the rounded end of a wooden spoon to poke holes all over the cake.
Spread the pineapple over the cake, getting as much into the holes as possible.
Using a hand or stand mixer, combine butter, cream cheese, vanilla & powdered sugar until smooth.
Frost the cake & lastly, sprinkle on chopped pecans.
BLUEBERRY COBBLER
1 cup self-rising flour
1 cup granulated sugar
1 cup milk
1 stick butter
1 teaspoon vanilla extract
2 cups fresh blueberries
Instructions
Preheat oven to 350F degrees.
Spray a 9x13 (or 9×9) baking dish with nonstick cooking spray.
Put blueberries on the bottom.
In a mixing bowl, stir together flour, sugar, milk, & vanilla.
Pour over top blueberries.
Place pats of butter evenly over top of batter.
Bake uncovered for 45 minutes to an hour until the top is a light golden brown and a toothpick comes out clean.
Allow to slightly cool before serving.
