How To make Marinated Chicken Kabobs
2 T Water
2 T Olive oil or cooking oil
1/2 t Dried Tarragon, crushed
1/4 t Hot Pepper Sauce
2 T Lemon Juice
1/8 t Salt
1 x Clove Garlic, minced
2 x Med Zucchini, cut in 1" piec
1 x Med green/Sweet Red Pepper
12 ounces boned skinless Chicken Breast Halves, cut into 1" cubes
For marinade, combine lemon juice, water, oil, tarragon, hot pepper sauce, salt, and garlic. Place chicken in a plastic bag and set in a deep bowl. Pour marinade in bag. Close bag. Let chicken stand 20 minutes at room temperature, turning bag frequently. Cut green or sweet red pepper into 1" squares. Drain chicken, reserving marinade. Thread chicken, zucchini, and red pepper alternately on 4 long skewers. Arrange skewers on the unheated rack of a broiler pan. Broil 4-5" from heat about 8 minutes or till chicken is tender and no longer pink; turn once and brush with marinade. Per serving: 173 calories, 27 g protein, 4 g carbohydrates, 5 g fat, 72 mg cholesterol, 83 mg sodium, 441 mg potassium.

Yogurt Marinated Chicken Kebabs. This Yogurt Marinated Chicken Recipe is healthy and easy to make. The chicken is tender, juicy and full of delicious flavors.
INGREDIENTS
2 Ibs boneless, skinless chicken thighs
2 Red onions
1 Cup plain yogurt ( I used plain greek yogurt)
2 Tbsp Olive oil
2 Tbsp Lemon juice
1 Tbsp Paprika
1 Tsp Dried Oregano
1/2 Tsp Cumin
1/2 Tbsp Salt
1/2 Tsp Pepper
NOTES
This recipe can also be cooked in the oven. For oven method line a baking sheet with aluminum foil and cook at 450F for 20-25 minutes, flipping the skewers halfway through.
If using wooden skewers, soak them for 30 minutes before using them.

Healthy Delicious Chicken Kebabs with Rice!
427 calories per serving - 54g protein/46g carbs/7g fat
This dish is absolutely amazing, chicken is so juicy and flavorful then you have the fragrant rice and top it with that yogurt mint sauce! SO GOOD. This is perfect for meal prep and weight loss and another delicious way to have your chicken and rice! Doing Ramadan the right way????????
For the chicken:
• 2 chicken breast (300g raw weight) cut into large cubes
• 1 tsp olive oil
• 1 tbsp crushed garlic
• 1 tbsp grated onion
• 1 tbsp paprika
• 1 tsp salt & pepper
• 1 tsp turmeric
• 75g low/fat free yogurt (can use Greek yogurt)
• 1/2 lemon juice
Mix till it changes colour and marinate. 4-5 pieces per skewer
For the yellow rice:
• 1 tsp olive oil
• 1/2 chopped onion
• 1 small carrot
• 1/2 medium red bell pepper
• 110g uncooked rice
• Same seasoning used earlier
• 300ml water
Bring to a boil then simmer and cook for 8-10mins
Cook the chicken for 4 mins each side
Mint sauce:
• 100g yogurt
• 2 mint leaves
• 1 tsp garlic powder
• 1/2 lemon juice
• salt and pepper to taste
Serve the chicken on top of the rice with the mint sauce and ENJOY!
