Herb Roasted Loin of Pork! Merry Christmas 2012!
Merry Christmas from Florida, where we spend it either at the beach or on the patio. Some odds and ends from the day, including the formal sacrifice of the Christmas beast.
Cameos by Blackie and Rocky.
Menu:
Herb roasted boneless loin of pork
Twice baked sweet potatoes
Roasted Brussels Sprouts
Beer bread
Beer
I used two herb rubs from Lionheart Spices on the roast,
their Smoked Herb and Garlic, and Lemon and Rosemary. They are EXCELLENT, and added a very robust flavor to the pork. A great combination! The roast was (still is) melt in your mouth delicious.
The sweet potatoes are a repeat because they are a smash hit in my book - a total departure from the average, and an absolute taste delight with any meal, but especially with pork. Next time you do sweet potatoes, do them this way.
The beer bread didn't rise as well as it normally does. I suspect my baking powder may be tired. It was still yummy.
The roasted Brussels Sprouts are simple and luscious, but I was distracted and let them go a little too long. You have to PAY ATTENTION. Some outer leaves were a tad crispy, but they were still okay, in spite of me. They're worthy of a try for anyone who doesn't like Brussels Sprouts, because they'll change your mind.
The dish cloths from Roc are amazing. The precision of the stitching boggles me. They may serve as elegant trivets, but they'll certainly never touch dishwater. :-)
The other prezzies for me and the kids came from my sister, who never fails to contribute to the enjoyment of the day. Thanks, Sis!

Pork Gravy - How to Make Danish Roast Pork Gravy - Flæskesteg brun sovs - flæskestegssovs
In Denmark, pork gravy is a must with a Danish Christmas Pork roast dinner. There are lots of ways to make gravy. Our recipe is simple and delicious. You can easily build a lip smacking gravy from pork pan drippings! During the Christmas dinner, you can actually hear the lips smacking when people are enjoying the Danish pork roast. Everyone is saying mmmmm and the pork gravy ( Flæskesteg brun sovs ) is one of the reasons. Homemade pork gravy is so delicious. You might even want to lick your plate it is so good!!!
This recipe video show how to make the traditional Danish pork gravy (flæskestegssovs) from scratch.
❄️Ingredients:
sugar
salt and pepper
potato water
1 bouillon cube
pork drippings from pan
2 tbsp of flour mixed with water
Instruction:
1. As soon as the pork roast is done cooking, we remove it to a cutting board. While the roast is resting, we place the roasting pan and all of the drippings it contains on the stovetop and it is time to work on the gravy.
2.First, tilt the tin and spoon all the fat off, leaving only the juices.
3.Then place the roasting tin over direct heat, turned to low, sprinkle in the flour and quickly work it into the juices with a wooden spoon.
4.Now turn the heat up to medium and gradually add the stock, this time using a balloon whisk until it comes up to simmering point and you have a smooth rich gravy.
5.Taste and season with salt, sugar and pepper and pour the gravy into a warmed serving bowl.
What to eat with a Danish Pork Roast? Traditionally, flæskesteg med svær (roast pork with crackling) always has poached apples with prunes, Danish sugar browned potatoes (brunede kartofler), Danish red cabbage (rødkaal) pork gravy (flæskestegssovs) and potatoes.
Also, Danish cold lunches such as an open sandwiches, known as smørrebrød, are decorated with a variety of fine ingredients including the poached apples and prunes as a topping.
