How To make Mjaddra (Lentils with Rice)
2 c Lentils
3/4 c Uncooked rice
2 md Onions; chopped
1/2 c Olive oil
1 tb Salt
1/4 ts Cumin
1/2 ts Allspice or bhar
Clean and wash the lentils and boil them until tender. Mash and strain into a separate pot. Add the rice, salt, and spices, and mix well. In a pan, saute the chopped onions in oil until golden. Add them with the frying oil to the lentils and rice. Bring the mixture to the boil with enough water to cover and simmer over low heat for about 10 minutes, until the rice is cooked, stirring regularly to prevent sticking. Serve lukewarm or cold with radishes and spring onions or a cabbage salad. That's the recipe straight from the book. I make a couple changes: first of all, I'm a bit liberal with the cumin and allspice - I don't use measuring spoons, and I'm sure I get more than the 1/4 or 1/2 teaspoon. Bhar, btw, is described by the book as "a spice blend made of cloves, cinnamon and nutmeg. It is very similar in flavor to allspice, which may be substituted for it." I use brown basmati rice, so I have to boil it for more than 10 minutes; this means I have to keep adding water to it so it doesn't dry out. I mean to go back to the restaurant I first had this dish at and ask them what spices they use, since theirs is both spicier and darker than mine. Learn how to make Mjaddra (aka Mujaddara, megadarra), one of the humblest and most classic yet tastiest and most nutritious dishes in the Levant. No wonder it is so popular!
Like all old recipes, Mjaddra comes with many variations; lentils and onions are both immutable components – and olive oil, of course! But then either burgul (aka bulgur) which is cracked wheat or rice are added - to differentiate, “Mdardra” is often the term when rice is used.
My recipe uses Burgul which boasts a higher nutritional value than rice. It is specific to South Lebanon where Mjaddra is still made the way it has been since time immemorial. It has been transmitted across generations, treasured beyond oblivion. Given its warm chestnut color, many refer to it as “Mjaddra Hamra” (red mjaddra). It had remained my grandmother’s undisputed favorite until her last days, and it is the dish my teenage daughter requested for her cooking initiation. It is one of my favorites too :)
What makes Mjadra so special is not only its high nutritional value, but also the way the lentils and Burgul become imbued with the sweet taste of slowly, carefully and richly browned onions – lots of them!!

???? 1 cup black lentils, sorted and rinsed
???? 4 cups water, divided
???? ¼ cup Extra virgin olive oil, more for later
???? 2 large yellow onions, diced (4 cups)
???? 1 teaspoon kosher salt more to taste
???? 1 cup long-grain white rice, soaked in water for 10-15 minutes and then drained
???? black pepper
???? ½ to 1 teaspoon cumin
???? Parsley, for garnish
???? 1 large yellow onion cut in very thin rings

This store cupboard dish is one of those I usually make when I have few fresh ingredients in the house and then when I make it I remember how wonderful it is and make a note to myself that I should definitely make it more often.
Mujadara is a lentil based dish cooked with either rice or bulgur wheat. It has several variations such as 'mujadara hamra' (reddened lentils with bulgur wheat) or 'mujadara makhbousa' which can be described as 'messy lentils' and has a texture similar to a risotto.
This Dish is More than 1000 Years Old and Still Loved
Mujaddara is a lentil and rice dish that has been eaten in the Middle East for over 1000 years. The first documented recipe is from the 13th century cookbook Kitab Al Tabikh. It utilises cheap ingredients to create a flavoursome nutritious meal, that is entirely vegan and so easy to love. When serving it, you top it with fried onions, and then add any number of toppings to give it even more flavour. Makes 6-8 servings:
Fried Onions:
3-4 Large Onions
250g Olive Oil
Sprinkle of salt
Mujaddara:
275g lentils
200g rice
700ml room temp water
1.5 tsp salt
1 tsp black pepper
1 tsp cumin
2 handfuls of fried onions
2 Tbsp Onion infused Olive Oil
Arabic Salad:
2 persian cucmbers
2 tomatoes
3-4 spring onions
2 lemons
1 tsp vinegar
salt and pepper
olive oil
Gazan Salad (Salata Ghazaweya):
2 green chillies
2 large garlic cloves (3 small)
1 small tomato (diced)
2 tbsp lemon juice
1 tbsp olive oil
1 tsp salt
10g dill (5g of just leaves)
Cucumber Yoghurt Dip:
230g greek yoghurt
1 small cucumber (60g)
1 small garlic clove
1 tbsp lemon juice
1/2 tsp salt
1/2 tsp dried mint
2-3 tbsp water (or until it reaches preferred consistency)

You only need 3 main ingredients to make mujadara;
2.5 cups Brown lentils
2 cups Basmati rice
6 cups water 3 cups for soaking and 3 cups for cooking
600 g Onion divided (½ finely sliced & ½ finely diced)
½ cup Olive Oil
¾ tbsp Salt
