How To make Molasses Cookies with Citron
1 c Molasses
2 c Sugar
4 1/2 tb Vinegar
1/2 c Water
1/2 lb Chopped nuts
1 1/2 ts Cinnamon
2 Eggs
1 1/2 ts Baking soda
1/4 lb Chopped citron
1 1/2 ts Ground cloves
1/2 ts Salt
1 c Corn sirup
Flour Beat eggs until light. Add molasses, sugar, sirup, water, and vinegar. Sift 2 cups flour. To 1 cup add spices, salt, and baking soda. Combine with first mixture. Add citron and nuts which have been dredged with 1 cup sifted flour. Add sufficient flour to make a soft dough. Mix thoroughly. Turn onto lightly floured board. Roll in thin sheet. Cut with floured cutter. Place on slightly oiled baking sheet. bake in moderate oven (400 F) about 10 minutes. 50 servings. -----

Broas de Mel (Madeira island molasses cookies)

NOTE: in the video I say use a half a teaspoon of baking powder, that was an error. I should've said use a half a teaspoon of baking soda. The recipe will work with baking powder but baking soda is the preferable ingredient .
2-1/4 cups flour
6 oz butter, room temperature
1-1/4 cup sugar
1 egg
2 tbsp molasses
½ lemon, zested
½ tsp baking soda
½ tsp cinnamon
½ tsp ground nutmeg
1/4 tsp ground cloves
1/2 tsp salt
Mix the sugar and soft butter in the bowl. About two minutes in an electric mixer or five minutes by hand.
In a separate bowl mix all your dry ingredients flour, spices, lemon zest, salt, baking soda
Now add all these dry ingredients to the bowl with the sugar and flour mixture. Add one egg and 2 tablespoons of molasses, then mix to combine all the ingredients.
Scoop out a portion of about 1 tablespoon of cookie dough and roll into a ball - repeat. Place the cookie dough balls on a cookie sheet pan lined with parchment paper.
Allow the dough balls to chill and refrigerator for about an hour .
Preheat your oven to 350°F
Remove the cookie sheet pans from the refrigerator and place immediately into a preheated 350°F oven. Bake for 15 to 20 minutes
