How To make Morrison's Sweet Potato Pie
2 C Sweet Potatoes
raw
4 Egg Yolks
1 1/4 C Sugar
1 1/2 Tsp Nutmeg
2 Tbsp Flour
1/4 C Whole Milk (+1 Tbs)
4 1/2 Oz Margarine (1 Stick + 1 Tb.)
2 Tbsp Corn Syrup :
white
1/4 tsp Vanilla Extract
1 9" Pie Shell -- unbaked
Boil potatoes until done. Peel and place in mixing bowl, removing all dark spots beforehand. Beat with mixer on a higher speed for 2 - 3 min.
Mix sugar, nutmeg and flour. Mix in milk. Add melted margarine, syrup and vanilla, and mix until everything is thoroughly blended.
Pour in pie shell, and bake at 375~ for about 45 minutes or until set (when filling doesn't stick to hand when touched).

Vegan Berry & Apple Galette recipe | Morrisons
Berry and Apple Galettes
Try these Berry and Apple Galettes for some fresh inspiration, they taste great and are super simple to make.
Serves 8
Ingredients
240g plain flour
80ml Farrington’s Mellow Yellow Rapeseed Oil
½ tsp salt
2½ tsps caster sugar
120g blackforest fruit mix
2 Bramley cooking apples, peeled, cored, cut into slices
Total time required 45 mins
Preparation time: 15 mins
Cooking time: 30 mins
Prepare Ahead
Defrost the Blackforest Fruit Mix. You will need 80ml of cold water for this recipe.
Instructions
Preheat the oven to 190C fan, 200C, gas mark 6. Put a flat baking tray in the oven to heat up.
To make your pastry, mix together flour, 2 teaspoons of sugar and salt. Pour in the rapeseed oil and stir until evenly mixed through.
Make a well in the centre and pour in half of the water, use your hands to work the water in. Drizzle in more water as required, so that the pastry holds together and shape into a ball.
Wrap the pastry in clingfilm and rest of at least 30 minutes.
For the filling, peel, core and thinly size the apples into a bowl of cold water. Wash the Blackforest fruit mix.
Roll out the pastry on a sheet of floured baking parchment. Drain the apples thoroughly and place the apples and Blackforest Fruit Mix into the centre of the pastry.
Fold up the sides of the pastry into pleats working all the way around. Sprinkle half a teaspoon of sugar onto the exposed fruit in the centre.
Slide the galette onto the preheated baking tray and bake for 25-30 minutes.
Allow to cool then serve and enjoy

????????St Vincent Sweet Potato Pudding-(With Carrots)
Growing up with my grandmother she used to bake this delicious sweet potato pudding on her coal pot in a heavy pot covered and at times in the drum she kept in the yard. It never gets old.
If you are in a foreign country make sure you use the right sweet potatoes or your pudding will not form.
This recipe is a very simple recipe for beginners.
Recipe-Double the recipe for a larger portion.
2 cups grated sweet potato (Batata sweet potatoes)
1/4 cup of grated coconut
1/3 cup of grated carrots or pumpkin(use more if you like, not too much since it will make it orange)
1/2 cup sugar
2 tablespoon ofgrated ginger
1 1/2 cup of coconut milk (you can use the remaining half as well)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon of melted butter
1/2 teaspoon salt
I used a 9 inch pan!
Sprinkling water on top helps the potato to cook.
*Pour sugar or a little sugar mix with water on the sides if you love that golden brown color when it is close to finish.
*At times we used a piece of tania, dasheen, or green plantain. If you want to eliminate extra starch used pumpkin or carrots.
*You don't have to use the aluminium foil if you do not want. Cook it uncovered or used another alternative if you wish.
