THE SECRET TO MAKE THE MOST AMAZING MUSHROOM SAUCE!
This recipe of mushroom sauce is perfect because as the title claims - is versatile, easy to put together, elegant, and incredibly delicious! In this video, I will show you the proper way to make this amazing and luscious sauce! All you need is a few everyday ingredients, some time and love, and voila! You will make the best mushroom sauce of your life that will go well with literally every food!
INGREDIENTS:
2 tablespoons of olive oil
1 medium onion, minced
4 cups of mushrooms, sliced
Salt to taste
Black Peper to taste
2 - 3 garlic cloves, minced
1 tablespoon of fresh thyme, minced
2 tablespoons of balsamic vinegar
1/3 cup of red wine
1 ½ cup (or more) of veggie broth
1 or 2 tablespoons of cornstarch diluted in 5 tablespoons of water
1/4 cup vegan cream
1 tablespoon of fresh parsley for garnish
1 tablespoon of vegan butter
METHOD:
Add olive oil over medium heat to a large heavy bottom skillet, then add the sliced mushrooms, add salt and sauté the mushrooms until golden brown. The more you sauté the mushrooms the tastier your sauce will be. Add the mushrooms in batches so the skillet won’t be too full, this makes the mushrooms brown faster.
Remove the mushrooms, add the onions, and sauté until golden. Add the mushrooms back to the skillet, add garlic, and sauté for 1 minute, add the balsamic vinegar, add the thyme and red wine, stir to combine, and allow the red wine to reduce until you see almost no liquid in the skillet.
Add the veggie broth, allow the sauce to cook for about 6-7 minutes, add more broth if necessary.
Add the cornstarch slurry, stir until all is incorporated, then add the vegan cream, and last, a couple of cubes of vegan butter.
Serve it over rice, fries, vegan steaks, mashed potatoes, pasta, meatless balls, etc

1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz

For The Chicken -
2 tsp (10ml) - Olive Oil For Chicken Seasoning
8 - Large Chicken Thigh, Boneless & Skinless
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1/2 tsp (1g) - Dried Thyme
1/2 tsp (1g) - Dried Oregano
Salt & Pepper
1 Tbsp (20ml) - Olive Oil For Cooking Chicken
Creamy Garlic Mushroom Sauce -
1 Tbsp (14g) - Unsalted Butter
2 - Shallots, Finely Diced
300g (10.5oz) - Swiss Brown Mushrooms
100ml (100g) - Dry White Wine
6 - Garlic Cloves, Minced
1g (0.03oz) - Fresh Tarragon
3g (0.1oz) - Fresh Parsley
300g (10.5oz) - Thickened Cream
50g (1.7oz) - Parmigiano Reggiano, Freshly Grated
Recipe Notes -
This dish is best when fresh, as the cream-based sauce can potentially split upon reheating. If you wish to store it, it will last two days in the fridge. I don't recommend freezing it.
This recipe is fantastic on its own but can also be served with all your favourite sides, such as mashed potato, pasta, rice and a wide range of vegetables.
The fresh herbs are optional, as well as the parmesan cheese, but they add incredible flavour. They can be substituted for their dried counterparts if you can't source fresh herbs. Use 1 tsp of dried parsley and 1/4 tsp of dried tarragon. The tarragon can easily overpower the dish if used too much. You can always add but can't take out, so adjust to your liking.
Cream alternatives will no longer make this dish the fantastic recipe that it is. Without cream, you'll need to add flour as a thickening agent, ruining the sauce's texture.

MUSHROOM SAUCE
2 Tablespoons butter or margarine
2 cups sliced mushrooms
1 tablespoon shallots, minced
1 cup chicken broth
2 teaspoons cornstarch
1/2 teaspoon salt
1/2 teaspoon dried parsley
fresh cracked pepper to taste
Melt butter or margarine in a medium size skillet or sauce pan on medium heat. Add sliced mushrooms and shallots.
Dissolve cornstarch in small amount of water. Add to chicken broth. Gradually add broth to mushrooms mixture and continue to stir and cook until thickened. Add salt, parsley and pepper to taste.
Spoon over baked or sauté chicken breasts with rice or mash potatoes and green vegetable.
ENJOY.
TIPS: Make 1 day ahead and store in an airtight container in refrigerator. Warm sauce on medium low heat before serving.
