How To make Mushroom Sauced Roast Beef
Ingredients

beef eye of round roast

dijon mustard

green onions, bias-sliced into 1/2 inch pieces

garlic clove, minced

butter or margarine
1/4
cup
flour
1/2
teaspoon
dried thyme, crushed
1 1/2
cup
beef broth
1/4
cup
light cream or milk
Directions:
Trim fat from meat. Mix mustard and pepper. Rub onto meat. Place meat on a rack in a shallow roasting pan. Insert a meat thermometer. Roast in a 325 degree oven until thermometer registers 140 for medium rare (1 1/2 to 2 hours) or 155 for medium (1 3/4 to 2 1/4 hours). Cover with foil and let stand 15 minutes before carving.
Meanwhile, for sauce, in a medium saucepan, cook mushrooms, green onions and garlic in hot margarine until green onions are tender. Stir in flour and thyme. Gradually stir in beef broth. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 minute more. Stir in light cream or milk, cook and stir until heated through. Thinly slice meat across the grain. Arrange on a serving platter. Pour some sauce atop meat. Pass remaining sauce. Serve with mashed potatoes.

“ROAST” BEEF WITH MUSHROOM SAUCE
Braised Beef:
Beef Sirloin – 500g
Water – 1 Liter
Salt and Pepper to taste
Sauce:
Butter – 1 Tbsp
White Onion (small diced) – 1 Tbsp
Flour – 2 Tbsp
Water – ½ cup
Mushroom Water – ½ cup
Soy Sauce – 1 Tbsp
Cream – 3 tbsp
Salt and Pepper to taste
Brown sugar – 1tsp

This is a great combination. A wonderful and simple recipe for Christmas and New Year Eve dinner. Be sure!! This sauce for beef tenderloin will amaze all your guests and family.
This is a wonderful roast beef from veal tenderloin with creamy porcini mushrooms sauce.
Mushroom sauce is prepared from a mixture of porcini and champignons. But you can take only porcini or only champignons. If you use only porcini, take more onions. To taste the sauce for beef tenderloin wasn't too rich. You can use only champignons and add dry porcini.
To fit the sauce any meat: baked turkey, chicken or lean pork.
Asparagus, sweet potatoes, baked or mashed potatoes are also great on the side.

Leave the meat to rest for 15-20 minutes before carve. You can serve roast beef cold the next day. You can also use beef and any meat for steaks.

.1.5 kg beef cube roll ( you can use beef topside,beef striploin or tenderloin)
.4 cloves tin slices of garlic
.1 tbs cooking oil for basting

cooking time 2 hrs 6 min (well done)
