PORK CHOPS AND BBQ BEANS RECIPE
(serves 2)
2 bone-in pork chops (thick cut, trimmed)
3 slices bacon, chopped
1/2 onion, chopped
1 can beans, rinsed
1/4 cup bbq sauce
1/4 cup water
1 tbsp cider vinegar
First, to prevent the pork chops from curling while they cook, cut two slits through the fat and connective tissue on the side of each chop. Pat them dry and season with your favorite rub or seasoning. Set chops in fridge until it's time to cook.
Setup your charcoal grill for direct cooking over medium to medium high heat. When your cast iron skillet has warmed up on the grill, cook the bacon until crispy. Remove the bacon and transfer to plate, leaving fat in skillet.
Add the chops to the bacon fat in skillet and cook until well browned and seared on one side. Transfer chops to a plate, seared side up. Next, add the chopped onion to the skillet and cook until softened. Stir in beans, bbq sauce, water, cider vinegar, and bacon and bring to a boil.
Now place the chops, browned side up, in the skillet with the beans and bbq sauce. Cover and simmer until the chops reach an internal temp of 140 degrees.

3 center cut Pork chops
butter and oil for frying
flour for breading
salt & pepper to taste
1 tsp or to taste Kinders buttery poultry blend
1 medium onion, diced
3 cups cooked rice
1 4 oz can diced green chilis
1 tsp parsley
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1 can cream of celery soup, or your favorite (1 can per 3 cups of cooked rice)
Preheat oven to 375 degrees.
In a skillet, heat oil and butter. Add diced onion and saute just until tender. In a separate bowl, add cooked rice, green chilis, parsley, onion powder, garlic powder, and cayenne pepper. When onions are tender, stir into rice mixture. Spread rice into a casserole dish that has been sprayed with non-stick cooking spray. Set aside.
In a bowl or a pie plate, add flour. Sprinkle with salt and pepper to taste. Sprinkle in buttery poultry blend. Coat pork chops in flour dredge. Add more oil to pan if needed to fry pork chops. When oil is hot, add chops and fry until browned on both sides. Don't worry if the chops are not done. They will continue to cook in the oven.
After chops are browned, lay on top of the rice. Bake in oven for 30-35 minutes. Serve with your favorite vegetable.
