Fast, easy, and economical treat for holiday gift giving.
Graham Cracker Toffee
2 sleeves graham crackers
1 c butter
1c light brown sugar packed
1 t vanilla
1/2 t salt
3/4 c chopped pecans or chocolate chips
Preheat oven to 350. Line a jelly roll pan with foil or parchment paper.
In saucepan bring butter and sugar to boil. Boil 2 min, stirring constantly.
Pour over crackers and spread to cover. Sprinkle with nuts. Bake 10 to 12 minutes. If you are using choco chips add after the cracker toffee is baked. Once they are soft spread over toffee. Let cool and break into pieces.

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make homemade graham crackers. This recipe is my homemade version of a Graham Cracker (or Graham Wafer). I don't know about you, but I always find it's a lot of fun replicating things that you would normally buy. These homemade Graham Crackers taste pretty close to the original grahams, which are my favorite, so if you want a cinnamon flavor you will need to add some ground cinnamon to the batter. Although Graham Crackers are usually thought of as kid food, I really appreciate these homemade ones with a hot cup of tea. You can also use them to make a great S'more, that delicious snack that takes roasted marshmallows and pieces of chocolate and sandwiches them between two graham crackers. And don't forget that you can crush them and use the crumbs to make a wonderful graham cracker crust.

Mini Christmas Crack | Cracker Toffee | Christmas Ornament Collection
Today I'm sharing the perfect treat for Christmas time--MINI Christmas Crack (also known as Cracker Toffee)! Salted caramel oyster crackers are drizzled with melted dark chocolate for a tasty and adorable sweet & salty snack.

Mini Christmas Crack (single recipe)
adapted from
1 bag (4 cups) oyster crackers
3/4 c. brown sugar
3/4 c. butter
2 tsp. vanilla extract
kosher salt
5 oz. dark chocolate melting wafers
Preheat oven to 350*. Line a rimmed baking tray with parchment paper and spray with baking spray. Pour the oyster crackers out in a single layer. In a medium saucepan over medium heat, melt the butter. Add the brown sugar and stir until dissolved. Bring this mixture to a boil. Boil and stir constantly for 3-4 minutes. Pour evenly over the oyster crackers. Use a rubber spatula to toss the oyster crackers in the caramel mixture so that every cracker is evenly coated. Sprinkle lightly with kosher salt. Bake at 350* for about 5-7 minutes--watch carefully so you don't burn the sugar! Remove and cool completely. Place the dark chocolate wafers in a microwave safe bowl. Melt in 30 second increments, stirring in between, until totally smooth. Drizzle the chocolate all over the crackers. Allow to cool completely at room temperature. Break the crackers apart. ENJOY!
Store in an airtight container.
