How To make Pasta Chicken Salad with Peanuts
3 sm Whole chicken breasts
1 lb Linguine; in 6" lengths
1 sm Green pepper; julienned
1 sm Sweet red pepper
julienned 4 Scallions; finely sliced
1 c Salted chopped peanuts
:
roasted VINAIGRETTE:
1 Lemon; juice of
2 tb Dijon mustard
2 tb Brown sugar
2 Garlic cloves; minced
2 tb Chopped fresh ginger root
(finely chopped) 1/4 c To 1/3 c. red wine vinegar
1/3 c Sesame oil
1/3 c Vegetable oil
1/3 c Olive oil
Salt and pepper; to taste :
GARNISH---------------------------------- Cucumber Watercress Poach chicken breasts in lightly salted water or chicken broth until done, about 10 minutes. (Or season the chicken with salt and pepper and bake it at 375 F. for 25 minutes). When chicken is cool, remove the meat from the bones and slice the meat thinly against the grain. Cook linguine in salted water according to package instructions. Rinse with cold water to cool. Drain linguine. Place the chicken, linguine, peppers, scallions and peanuts in a large bowl. Prepare vinaigrette by whisking together all the ingredients. Gradually pour the dressing over the salad; mix well. Garnish with cucumber slices (peel the cucumber, cut it in half, remove the seeds and slice it) and watercress sprigs. Recipe from Eichelbaum & Company/San Francisco, CA. Thai Peanut Pasta Salad Recipe:
Dressing
2 tbsp lime juice
3 tbsp creamy peanut butter
1 tbsp honey
1 tsp sesame oil
1 clove minced garlic
2 tbsp avocado oil
1 tsp minced ginger
2 tbsp soy sauce
Mix together into a creamy dressing
In a large salad bowl add
2 cups cooked Linguine noodles
1 cup shredded green cabbage
1 cup shredded purple cabbage
1 stalk chopped green onions
1 cup chopped Persian cucumbers
1 cup shredded carrots
1/4 cup chopped cilantro
Dressing
Toss, serve and garnish with roasted peanuts and cilantro
BBQ Ranch Chicken Salad Recipe:
In a large salad bowl add
8 oz. cooked shell pasta
1 cup chopped cucumber
1 cup shredded carrots
1 stalk chopped green onions
1/2 cup canned black beans (drained)
1 chopped cooked chicken breast
1 cup charred (fire-roasted) corn
1 cup chopped cherry tomatoes
1/4 cup shredded Mexican blend cheese
1/4 cup bbq sauce
1/4 cup ranch dressing
Toss and serve. Garnish with pumpkin seeds and fried onions
Elote Pasta Salad
Dressing - in a bowl add
1/4 cup Greek yogurt
1/4 mayonnaise
1/2 tsp ground cumin
1/2 tsp chili powder
1 lime’s juice
Mixmixmix
In a salad bowl:
Add 8 oz. cooked fusilli pasta
2 1/2 cups fire roasted corn
3 chopped stalks green onions
1/4 cup chopped red bell pepper
1/4 cup chopped cilantro
1 chopped avocado
3/4 cup cotija cheese
Mix in the dressing, toss it up
Garnish with more cotija cheese, paprika, cilantro

Jaggery (powdered) - 3 tbsp

Sesame oil - 1tbsp

Mango sliced - 2cups
Cabbage shredded - 1cup
Purple cabbage shredded - 1cup
Capsicum sliced - ½ cup
Raw papaya shredded - 1cup
Carrot juliennes - 1 cup
Spring onions chopped - ½ cup
Mint leaves - a handful
Salt - a pinch
Lemon juice - 2tbsp
Sesame (toasted) - 1tbsp

Addictive Peanut Butter Salad
Crunchy & satisfying, whip up this mouthwatering addictive peanut butter salad that will leave you craving more with all the ingredients you’ll need from Dunnes Stores!

Serves: 4
Time: 20 minutes
1 rotisserie chicken
1 large cucumber, peeled and deseeded and cut into bite sized chunks
2 large carrots, julienned
⅓ red cabbage, finely shredded
Large handful of fresh coriander, torn
40g roasted peanuts, chopped
200g tortilla crisps
For the dressing:
4 tbsp crunchy peanut butter
1 tbsp maple syrup
5 tbsp soy sauce
4 tbsp rice vinegar
1 long red chilli, finely sliced
2 tbsp toasted sesame oil
1. Mix all the dressing ingredients together and set aside.
2. Shred the meat from the chicken and discard the bones.
3. Prep your cucumbers, carrots and red cabbage. Crush the roasted peanuts and set aside.
4. Finally, plate up! In a serving bowl, place your veg, chicken, coriander and dressing and lightly toss then serve scattered with peanuts, coriander and crispy tortilla chips.
