How To make Pasta with Caramelized Onions

Slice up lots of onions (1.5 cups per person). Put them in a saute pan with olive oil or sprayed with Pam and cover. Cook on low heat 45 minutes, until soft. Remove cover, turn heat to medium and cook liquid away. Add salt & pepper (don't be shy w/ the salt), and continue cooking and stirring onions until they turn golden brown (if they stick a little, that's ok, just turn the heat down a tad). Splash in a little white wine, and stir it in, scraping up any browned bits. Turn heat to high, stirring and scraping until the wine is gone. Throw in a big handful of fresh parsley (or a smaller handful of dried), toss, and serve over spaghetti. Add parmesan to taste at the table.
Note: I like this just as it is, but Bob's likes it with a little more sauce. You may want to add some cream or a little tomato sauce or a bit of both.

Brie Pasta | Serves 2
????INGREDIENTS????
7oz / 200g Pasta of choice, here I've used Gigli
7oz / 200g block of Brie, rind removed and diced into chunks
6 slices of Streaky Bacon (see notes)
1 large Onion, thinly sliced
1 tsp Fresh Lemon Juice
1/2 tsp Fresh Thyme (approx 2 sprigs)
Salt & Black Pepper, as needed
Olive Oil, as needed
????METHOD????
Bacon: add bacon to a pan over low-medium heat and fry both sides until crisp with the fat fully rendered down. Remove bacon and leave the fat in the pan. Dice just before needed.
Onions: add onion to the leftover fat and fry for around 10mins until they just start to pick up colour (add more oil if needed). Turn heat to low and gently caramelize the onions until golden, sticky and very soft (around 30-40mins). This process is important to sweat down the onions and sweeten them, the lower and slower you fry the more caramelized they'll be.
Pasta: just before the onions are finished, pop your pasta in salted boiling water and cook until al dente. Reserve a cup of starchy pasta just before draining.
Brie: whisk 1/2 cup/120ml starchy pasta water in with the onions then melt in the brie.
Serve: toss in pasta then stir in 1 tsp lemon juice, 1/2 tsp thyme and the diced bacon, using more starchy pasta water to thin out the sauce if needed. Season with salt and black pepper (careful with salt as bacon and brie already salty) then serve up and enjoy!

1 lb yellow onions, thinly sliced
1 lb red onions, thinly sliced
4½ oz tomato paste
10 oz penne pasta or any pasta of your choice, cooked & cooled
5 garlic cloves, thinly sliced
1 cup pasta water, plus more as needed
½ cup pale ale beer or any beer of your choice
¼ cup olive oil
1 tsp chili flakes
Salt & ground black pepper to taste
To serve:
Parsley, chopped
Parmesan cheese, grated or powdered
⬇️ How to make Caramelized Onion Pasta ⬇️
0:06 Heat up olive oil in a Dutch oven or deep skillet over medium heat.
0:13 Add both onions & saute for roughly 15 minutes until caramelized & softened. Adjust heat as necessary.
0:40 Once the onions are caramelized, add garlic & saute briefly.
0:50 Add chili flakes & tomato paste. Roast briefly.
1:10 Deglaze with beer & reduce briefly.
1:20 Increase to medium-high heat, add cooked pasta & pasta water. Stir to combine, scraping any caramelized bits at the bottom.
1:37 Simmer for 5 minutes until the sauce has reduced & sticky, not saucy.
1:45 Season with salt & pepper to taste. Adjust accordingly.
2:10 Portion accordingly. Garnish with 1 tablespoon parmesan cheese & ¼ teaspoon of parsley per serving.

4. Heat butter in stockpot over medium heat.
5. Add onion and salt.
6. After onions have given up their liquid, reduce heat to low to medium low and cook until achieving the color of a tootsie roll, scraping up the fond during the process.
