How To make Pasta with Sauted Vegetables
1 pound fresh pasta
1/2 pound dried
2 tablespoons extra virgin olive oil
2 cloves garlic :
peeled and sliced
3 cups prepped raw vegetables
such as onion, pepper, squash, mushrooms, eggplant, spinach, or chard 1/4 cup fresh basil chopped
1 large tomato
peeled, seeded, and chopped 1/4 teaspoon red pepper flakes :
crushed
kosher salt to taste 1/2 cup Parmesan cheese :
grated
Bring 1 gallon of water to a boil in a large pot. Add dried pasta, and cook to al dente-to the tooth- (just soft enough so that it still must be chewed). Drain in a colander. For fresh pasta, turn the heat down to low, cover the pot and hold water on warm until the vegetables are almost done before you cook the pasta. Put oil and garlic into a large skillet. Turn the heat to medium and cook the garlic just until it begins to color, not beyond or it will burn and be bitter. Add the vegetables in the order that they will cook, starting with those that will take the longest. Move them constantly with a spatula so they will not overcook in one spot. For fresh pasta, reboil the water at this point, and cook the pasta during final minutes of cooking the vegetables. Drain. Add the herbs to the vegetables and mix to distribute. When the vegetables are almost cooked (still a bit too crunchy), add canned tomato and crushed pepper flakes, turn the heat down to low, and simmer for 3-4 minutes to blend the flavors. Taste and add kosher salt if necessary.

SAUTEED BROCCOLI RECIPE
2 tablespoons extra virgin olive oil
4 cups broccoli florets, (1 head of broccoli)
4-6 cloves garlic, chopped
1/4 cup water
salt and pepper
INSTRUCTIONS
Heat olive oil in a large saute pan over medium heat. Add in the garlic with a pinch of salt and saute until fragrant (about 30-60 seconds).
Add broccoli to the pan, season with salt and pepper and saute for 2 to 3 minutes.
Add in 1/4 cup of water, pop on the lid and cook for another 3 to 5 minutes, or until the broccoli is tender. Remove the lid and cook until any extra water has evaporated out of the pan.
Adjust seasonings, serve and enjoy!

**INGREDIENTS**
1 cup of penne pasta
¼ cup sliced sweet peppers
Handful of sliced cherry tomatoes
¼ cup red onion
Chef Anthony’s WOW-Everything Seasoning (Sea salt, Black pepper, Thyme, Garlic powder mixed together)
8 oz heavy cream
2 tbsp lemon juice
2 tbsp dijon mustard
½ cup raw shrimp, peeled and deveined
3 oz shredded parmesan cheese
1 oz grated parmesan cheese
3 oz shredded mozzarella cheese
1 tbsp fresh parsley
**RECIPE**
Pasta
1. Cook pasta in boiling water
2. Boil to al dente
Veggies & Shrimp
1. Preheat 2 pans on medium heat with grape seed oil
2. Slice tomatoes in half and add to one of the heated pans
3. Add red onions and sweet peppers to same pan
4. Let vegetables saute
5. Season raw shrimp on both sides, toss to ensure all are coated with seasoning
6. Add shrimp to the second pan and stir
7. Cook shrimp until light pink, but still soft.
8. Add vegetables to pan with shrimp
Cajun Sauce
1. Add heavy cream to pan that held the vegetables. Bring to a boil
2. Add mustard, lemon juice, seasonings and shredded cheese (the more cheese you add, the thicker the sauce will be)
3. Stir sauce rapidly
Combining all ingredients
1. Add cooked penne noodles to shrimp and vegetables
2. Add ¾ of cajun sauce mixture to the pan with everything
3. Plate and add leftover cajun sauce to dish
4. Finish with fresh parsley and grated parmesan cheese

• 1 small onion
• 2 medium bell peppers
• 1 medium yellow squash
