How to | 'Ohana Breakfast Bread | Pineapple Coconut Bread

Nick and Angela break down the techniques you need in order to craft a beautiful, delicious, and healthy meal (with the occasional baked good or margarita thrown in). Yield 1 – 9″ x 13″ cake pan
Ingredients
1 3/4 Cup Water
1 Egg Yolk
2 Tbsp Shortening
4 1/2 Cup Bread Flour*
1/2 tsp. Salt
1/3 Cup Sugar
1 Packet Instant Yeast*
Coconut Mixture
1 C. Crushed pineapple
1 C. Unsweetened coconut
1/2 C. Sugar*
2 T. Cornstarch
Pineapple/Coconut Method
1. Combine pineapple and coconut in bowl. Drain liquid from crushed pineapple*
2. Combine sugar and cornstarch in separate bowl and mix well.
3. Add sugar and cornstarch mixture into pineapple and coconut mixture and mix well.
4. Refrigerate for 1 hour.
Bread Method
1. Add water, yeast, sugar, salt and 2 cups flour. Use paddle attachment to mix. Add egg and remainder of flour. Using the dough hook attachment, mix until dough forms, roughly 4 minutes.*
2. Let dough rise 1 hour until it doubles in size.
3. Roll out dough onto a floured surface until about 1 inch thick*
4. Next spread 3/4 pineapple/coconut mixture over the top of the dough.*
5. Fold dough onto itself and place in a greased 9″ x 13″ cake pan, carefully spreading the dough to the edges of the pan.*
6. Score dough with a pizza cutter or knife.*
7. Let dough rise in warm oven (110 degrees F) – about half way up the pan.
8. Bake at 325 degrees F for 20 minutes then remove from oven, brush remaining coconut/pineapple mixture over top. Continue baking for 15-20 minutes or until golden brown.*
9. Let bread cool, cut and serve.
Pineapple Banana Bread Recipe with Brown Butter
A banana pineapple bread recipe made with 3 bananas, crushed pineapple, brown butter, and toasted pecans!

½ cup brown butter - cooled to room temperature
½ cup granulated sugar
2/3 cup light brown sugar
2 large eggs - beaten
¼ cup sour cream - room temperature
3 medium overripe bananas - mashed (see note)
1/2 cup crushed pineapple - drained
1 tsp pure vanilla extract
2 cups all-purpose flour - (256g)
1 tsp baking soda
½ tsp salt
½ cup roasted pecans - chopped (or raw walnuts)
