How To make Pineapple Bundt Cake

1 c Butter or margarine; soften
2 2/3 c Cake flour
2 ts Baking powder
2 ts Lemon extract
1/2 ts Salt
3 lg Eggs
8 oz Crushed pineapple in juice
Preheat oven to 325~. Grease and flour bundt pan. In large mixing bowl, using low speed of electic mixer, beat sugar and butter until blended. Increase speed to high; beat until light and fluffy. Reduce speed to low; add flour and remaining ingredients; beat until well mixed, scraping sides of bowl constantly. Increase speed to high; beat 2 minutes, occasionally scraping bowl. Spoon batter into pan. Bake 50-55 minutes or until tested done. Cool cake in pan on wire rack for 10 minutes; remove from pan to cool completely. -----

PINEAPPLE UPSIDE DOWN BUNDT CAKE

Total Time: 40 minutes
Ingredients
– ½ cup butter, melted
– ½ cup packed brown sugar
– 1 – 20-ounce can pineapple slices, juice reserved
– 1 jar maraschino cherries
– 1 box yellow cake mix
– 1 – 3.4-ounce box vanilla pudding mix
– 3 eggs
– ⅓ cup vegetable oil
– ⅓ cup milk, plus more as needed
Directions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Spray a bundt pan with nonstick spray.
Evenly pour the melted butter into the bottom of the bundt pan and top with the brown sugar.
Cut the pineapple rings in half and, alternating with the cherries, place into the butter-brown sugar mixture in the bottom of the pan.
In a large bowl, combine the cake and pudding mixes together. Add the reserved pineapple juice and milk. Add the eggs and vegetable oil, and mix until fully blended.
Pour the batter evenly over the pineapple and cherries.
Bake for 30 minutes, following the cake mix instructions for a bundt pan, until an inserted toothpick comes out clean.
Cool the cake for about 10 minutes before running a knife around the edges and inner ring of the pan. Invert onto a serving plate and slice between pineapple rings to serve
????????When you add the reserved pineapple juice and milk in step 4, they should equal 1 cup of liquid. If you like, you can first pour the reserved pineapple juice into a liquid measuring cup. Add enough milk until you have 1 cup of liquid. Add the liquid to the combined cake-and-pudding mix, then proceed with the recipe.

AN EXTRA-LARGE TUBE PAN REQUIRED
1 CUP SHORTENING
3/4 CUP SALTED BUTTER (ROOM TEMPERATURE)
3 CUPS GRANULATED SUGAR
9 RAW EGGS
3 CUPS ALL-PURPOSE FLOUR
2 TSP. BAKING POWDER
1 TSP. SALT
2 TSP. VANILLA FLAVORING
20 OZ. CAN CRUSHED PINEAPPLE
1/2CUP BROWN SUGAR
Preheat the oven to 350 degrees.
Pour half of the can of pineapple into a separate bowl. Using amixer,mix shortening, butter until creamy. Add sugar and beat until fluffy.Now add eggs one at a time. Add baking powder & salt. Add flour 1/2 cup at a time. Add flavorings.Mix on medium low speed for 2 minutes tops. Mix in ½ can of pineapple. Spread ¼ stick of room temperature butter in bottom of tube pan (not a two part pan, should be solid) Spray pan with cooking spray well including inside flute. Add brown sugar around bottom. Partially drain the remaining pineapple and add to bottom of pan evenly. Press down flat. Fill pan ¾ full with cake batter. Bake for 30minutes at 350 degrees. Now turn the oven down to
325 degrees and bake for 35-40 more minutes.

2½ cups (375g) all-purpose flour
2½ tsp baking powder
1 tsp baking soda
½ tsp salt
Baking spray
½ stick (4 tbsp/56g) butter, melted
1 cup (180g) brown sugar, divided
8 pineapple slices
8 red glazed cherries
1 stick (8 tbsp/113g) butter, softened
2 large eggs
¾ cup (150g) plain yogurt
2 tsp vanilla extract
1 cup (240ml) milk
