How To make Pulled Pork Tacos with Tomatillo Salsa(Gc)
4 red bliss potatoes
cooked
:
slice 1/4-inch thick 1 pound pulled bbq pork
1 cup grated monterey jack cheese
8 white corn tortillas
salt and freshly ground pepper olive oil tomatillo salsa:
8 medium husked tomatillos -- coarsely chopped
1 tablespoon finely diced red onion
1/2 tablespoon minced jalapeno
2 tablespoons fresh lime juice
2 tablespoons coarsely chopped cilantro
1 tablespoon olive oil
1 teaspoon honey
salt and freshly ground pepper
Prepare a wood or charcoal fire and let it burn down to embers.
For each serving, lay 1 1/2 ounces of pork over half of the tortilla, top with potato slices, 1/4 cup of cheese and season to taste with salt and pepper. Fold over the tortilla and brush with olive oil. Grill for 3 minutes on each side, or until crispy and cheese has melted. Serve with Tomatillo Salsa.
TOMATILLO SALSA
Combine the tomatillos, onion, jalapeno, lime juice, cilantro, olive oil and honey in a bowl. Season with salt and pepper. Refrigerate covered, for up to 1 day. Bring to room temperature before serving.

Putter's Bar & Grill
Billy Joe Wilson from Putter's Bar & Grill at the Grey Rock Golf Club shows how to make their Fish Tacos.
Ingredients for Fish Tacos:
2 - Flour Tortillas
1 - 6 oz. cleaned Tilapia Fillet
1 cup of all purpose flour
1 cup of panko bread crumbs
1 1/2 cup of butter milk
2 oz. of shredded cabbage
a few cilantro sprigs
2 oz. of Chipotle Lime Sauce
In a pan or deep fryer heat peanut oil to 350 degrees. Take your tilapia fillet and cut in half down the center. Once completed take both pieces of tilapia and dredged them in flour. Shake off excess flour then dredged them in the buttermilk. Once your tilapia has been coated with buttermilk dredged them for a final time in panko bread crumbs (make sure your fillets are evenly coated). Place breaded tilapia in pan or deep fryer. Fry until the bread crumbs turn golden brown. Place each fillet on a flour tortilla. Fill each tortillas with 1 oz of shredded cabbage, a nice spoonful (1 oz.) of chipotle lime sauce, and top with a few cilantro sprigs. Server with mango salsa and chips.
Ingredients for Chipotle Lime Sauce:
4 cups of Plain Low-Fat Yogurt
1 Stalk of Cilantro (finely minced)
1 - 7.5 oz can of chipotles & adobe sauce
1/4 cup of fresh lime juice
6 cloves of roasted garlic (finely minced)
Combine all ingredients in a large mixing bowel. Using a whisk slowly mix all ingredients are thoroughly blended together. Once all ingredients are blended (should be a tater sauce constancy)

Here are the 7 base ingredients we need.
2 cans of Chickpeas
1 package of Corn
1 Package of Wheat gluten (may sub for gluten free flour)
1 Package of Tofu
1 Package of Rice paper
2 cans of Jack fruit ( may sub for oyster mushrooms)
1 can of Black beans
*I will also note I did not include oils, spices or sauces in my 7 ingredients list but will be using them, since these are things I assume you have at home. The extra ingredients I used are writing in a printed recipe and on a printable grocery list.
Pro Tips
* You can make any of the recipes shown today gluten free by subbing the wheat gluten for almond flour. Oil free options are available for everything except vegan mayo...haven’t cracked that one yet.
