How To make Ras Asfour(Lentil Soup)
1 1/2 c Yellow or orange lentils
-(go through them and pick -out stones) 1/2 lb Choice ground beef
1/3 c Chopped fresh parsley
1 t Salt
1/4 ts Pepper
2 ts Olive oil
1 Onion, sliced
1/2 c Shaarla, or vermicelli
-broken into pieces 1/3 c Lemon juice
Suhour ("the meal before sunrise") is usually good, stick-to-your-ribs food. Rinse lentils and drain, picking out any discolored ones. Combine with 5-6 cups water in a large kettle and bring to a boil. Lower heat and simmer for 20 minutes, skimming off foam as it forms on top. While the lentils are cooking, combine ground meat with parsley, salt and pepper. Using about a tablespoon of the meal mixture for each, form into small meatballs and chill until needed. Heat the olive oil and saute the onion until soft and golden. Reserve. When lentils are soft, mash them with the back of a spoon to thicken the soup. Add shaarla (or vermicelli) and meatballs. Cook 10-15 minutes longer, until meatballs are cooked through. To serve, divide onion slices among 6 bowls. Stir lemon juice into soup and ladle over onions. Makes 6-8 servings.

This is a light, healthy and easy to make soup that will keep you warm in the winter days. It is made from small rice-shaped pasta called Orzo. It can be made with chicken broth and add your favorite vegetables. I like it with carrots and wanted to share with you this simple soup recipe.
serving size: 3-4
Ingredients:
2 tbsp vegetable oil
1/2 medium onion, finely minced
2 medium carrots, finely minced
1/2 tsp garlic powder
1/2 tsp Salt (or to taste)
1/4 tsp black pepper (or to taste)
5 cups water +2 cubes of chicken flavor bouillon cubes
(or 5 cups of chicken broth)
1/3 cup Orzo pasta; It is a thin, oval, rice-shaped pasta

This Tunisian chicken and frik (freekeh) soup is super flavourful and heartwarming. The chicken becomes really tender and delicious... love it! This is one of our favourite soups, we love to make it especially during Ramadan.

Ingredients:
- 1.5kg chicken (I use a whole chicken but you can use chicken drums or thighs)
- 125g tomato concentrate
- olive oil
- 2 chilli peppers (I use a mix of red and green)
- 2 onions
- 4 garlic cloves
- 5-6 carrots
- 2 tomatoes
- a small bunch of fresh coriander
- 1 and a half tsp of ground ginger
- 2 tsp ground caraway
- 1 tsp ground cumin
- 1 tsp ground turmeric
- salt
- pepper
- 1 can of chickpeas
- 1 cup of freekeh

Egyptian salad.
One of my favorite salads to make.
Egyptian Salad
1 medium red onion
2 tomatoes
2 small cucumbers
1-2 carrots
1tbs lemon juice
2tbs olive oil
Less than 1tbs white vinegar
Season to taste with salt and pepper
Refrigerate until ready to use.

200 g de viande hachée (on en fera des boulettes )
1 oignon
1 poignée de pois chiche (prêt à l'emploi Samia ou trempés la veille)
4 tomates fraîches (ou une boite de tomates pelées)
1 cuillère a café bien pleine de tomate concentrée.
1 c à soupe de Ras el Hanout
1 c à soupe de Coriandre Moulu
1 pincée de Gingembre
1 pincée de Cannelle
1/2 c à café de poivre noir
1/2 courgette
1/2 carotte
1 poignées de fric (blé concassé) vous pouvez remplacer par du vermicelle
1/2 botte de coriandre ciselée
3 feuilles de menthe ciselées

2 tablespoons olive oil
1 small white onion, peeled and diced
1 cup diced carrots
1 cup diced celery
3 cloves garlic, peeled and minced
6 cups chicken or vegetable stock
1 (14-ounce) can fire-roasted diced tomatoes
1 1/2 cups (about 8 ounces) DeLallo whole wheat orzo pasta, or other whole wheat pasta
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
4 cups loosely-packed spinach
