How To make Russian Honey and Dried Fruit Bread
2/3 c Honey
1/2 ts Cinnamon
1/4 ts Each: ground cloves, ground
-nutmeg 1/2 ts Baking soda
1/4 c Margarine, softened
2 Eggs, separated
1/2 c Buttermilk
1/2 c Raisins
1/4 c Chopped pitted dates
1/4 c Chopped apricots
1/2 c Chopped walnuts
1 3/4 c Whole wheat pastry flour
1 1/2 ts Baking powder
1/2 ts Salt
Preheat the oven to 325 deg. In a small saucepan, heat the honey, bringing it just to the boiling point. Remove from heat and stir in the spices and baking soda. In a mixing bowl, cream the margarine and stir in the egg yolks, one at a time. Beat in the buttermilk until smooth. Add the honey mixture and mix in thoroughly, then stir in the dried fruit and nuts. In a large mixing bowl, combine the flour, baking powder and salt. Make a well in the center and pour in the honey mixture. Stir together vigorously until thoroughly combined. Beat the egg whites until stiff, then fold inot the batter. Pour into an oiled 9 by 5 by 3 inch loaf pan. Bake for 55 minutes, or until a knife inserted into the center test clean. Cool on a rack, then cover tightly with foil to store. Makes 1 loaf.

Russian Pryaniki /Traditional Stamped Honey Bread
Pryaniki
The name of the Russian gingerbread comes from the word 'pryany' which means 'spicy'. The first pryaniki in Russia appeared around the IX century and were called honey bread.
A thousand yeasrs ago Pryaniki were made out of rye flour mixed with honey and berry juice. Later when Russia started to trade with India and the Middle East and exotic spices were imported, spices were often added to flavor the dough.
This spice mix
Dry Perfume
Dry Perfume mix:
1 tsp ground Coriander
1 tsp ground Cinnamon
1 tsp ground Cardamom
1 tsp ground Ginger
1 tsp ground Cloves
1 tsp ground Nutmeg
2 tsp Cocoa Powder
Pryaniki dough:
300g Dark Rye Flour
300g Plain(All-Purpose) Flour
1 egg
100g Butter
400g Buckwheat Honey
1 tsp Baking Powder
For a filled Pryaniki you can use chopped nuts, honey, jam, caramel or fruit paste.

Method:
Sift two flours together.
Take out 3-4 table spoons of flour mix and set aside.
To remaining flour mix ad sifted spices.
Set aside.
In a small sauce pan heat up honey and butter for about 5 minutes.
Take off the heat and let cool for 5 minutes.
Add egg to the flour mix and mix well.
Add honey mix to flour mix, mix it well and let rest for 5 minutes.
Gradually add reserved flour to dough and mix until consistency is like a play dough' and when you pull out a little piece of dough, it does not brake.
Let dough rest for 20 minutes.
Repair mold by brushing them with cooking oil.
Mold your Pryaniki and place them on a cookie tray.
Bake at 425°F(220°C) for 8-10 min.
Now, Pryaniki will still be soft.
Cool them completely before glazing with sugar glaze.
Sugar Glaze:
150g sugar
50g water
In a small sauce pan, add sugar and water and bring to a boil.
Boil for about 5 min.
( your glaze is ready when you drop a small amount in water and it can be rolled into a small sugar ball)
Let your glaze cool down a little bit, just 3-5 minutes.
Glaze pryaniki on both side with sugar glaze.
Keep them on a cooling rack until sugar glaze is set, looks very glossy and with some white shadows.
Sugar glaze enhances pattern and also serves as a preservative for pryaniky to stay soft.
After sugar glaze is dry completely you can wrap pryaniki in small bag and they are ready for gift giving.

INGREDIENTS:
• 2 cups rye flour (

• 2 tsp vegetable oil
• 1 cup warm water
INSTRUCTIONS:
1. In a large mixing bowl, combine the dark rye flour, bread flour, salt, instant yeast, cocoa powder, coriander seeds, and caraway seeds. Mix well to evenly distribute the ingredients.
2. In a separate bowl, mix the warm water with oil and molasses until dissolved.
3. Pour the molasses mixture into the dry ingredients. Stir with a spoon or spatula until a sticky dough forms and all the flour is incorporated. Make sure there are no dry patches.
4. Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature for at least 12 hours. During this time, the dough will rise and develop flavor.
5. After the resting period, preheat your oven to 450°F (230°C). Place a large, oven-safe pot with a lid (such as a Dutch oven) into the oven while it preheats. This will help create a crusty loaf.
6. Knead the dough for about 5 minutes until it becomes smooth and elastic. Use the heels of your hands to push the dough away from you, then fold it back toward you, rotating it a quarter turn each time.
7. Shape the dough into a round ball. You can do this on a piece of parchment paper. Use heat-resistant parchment paper.
8. Make a few shallow cuts on the top using a sharp knife.
9. Carefully remove the hot pot from the oven. Be careful as it will be very hot. Remove the lid.
10. Use the parchment to lift the dough and place it in the pot. Be cautious and use oven mitts to handle the hot pot.
11. Cover the pot with the lid and return it to the oven. Bake for 30 minutes with the lid on.
12. After 30 minutes, remove the lid and continue baking for an additional 20 minutes, or until the bread is deeply browned and sounds hollow when tapped on the bottom.
13. Once baked, carefully remove the bread from the pot and let it cool on a wire rack before slicing.
NOTE:
All types of rye flour will work for this recipe.

2 / eggs
65g / granulated sugar (4+1/2 tablespoons)
8g / vanilla sugar ( 1/2 tablespoon)
A pinch of salt
Mix well
100ml / milk (1/2cup - 1 tablespoons )
40ml / vegetable oil ( 3 tablespoons)
80g / all-purpose flour (1/2 cup)
10g / baking powder ( 1,5 tablespoons)
Mix well
1 teaspoon / orange zest
3-4 / sweet apples
Pour into the batter and mix well!
Bake in the preheated oven at 180 ° C / (356 ° F) for 50-55 minutes!
