How To make Salsa Verde, Mexican Style
1/2 md Onion, finely minced
1 tb Minced, fresh cilantro
1 Serrano or jalapeno chile,
-finely minced 1/2 ts Salt, OR more
10 oz Canned tomatillos, well
-drained 1. If possible, use an electric blender or food processor to blend all the
ingredients together. (Without machines, use a fork or mortar and pestle to mash the ingredients.) 2. Taste and adjust seasonings.
Makes about 2 cups.

There’s nothing like a homemade roasted tomatillo salsa. It’s super easy to make and it doesn’t require a ton of ingredients. Making a Salsa Verde at home that’s authentic with classic Mexican flavors involves using yummy tomatillos, onions, garlic, serrano or jalapeno peppers! I personally love the flavors of a roasted salsa verde because the flavors are deeper and earthier. This green salsa is great for tacos, enchiladas, carne (meat) and so much more! It’s a super quick homemade salsa recipe that you can make over and over again. I promise that once you make this salsa de tomatillo recipe, you’ll stop buying store bought sauce. It’s THAT good! 5-6 Fresh Tomatillos
3 Garlic Cloves
2 Serrano Peppers or 1 Jalapeno Pepper
½ White Onion
⅓ Cup Fresh Cilantro
1 ½ - 2 tbsp Kosher Salt

Boiled Salsa Verde
6 medium tomatillos
1/2 medium onion
1 jalapeño or Serrano pepper
Fresh cilantro (20 stems)
1 Tbsp lime or lemon juice
1/2 Tbsp salt (Himalayan)
*These amounts yield 1 1/2 cups salsa
Fresh Salsa Verde (2:58)

1/4 medium onion
1 jalapeño or serrano pepper (I used 1/2 serrano)
Fresh cilantro (20 stems)

Roasted Salsa Verde (5:22)
6 Tomatillos
1/2 medium onion
5 garlic cloves
1 Jalapeño or serrano pepper
Fresh cilantro (30 Stems)
1 1/2 Tbsp lime or lemon juice
1/2 Tbsp Salt (Himalayan salt)
*These amounts yield 2 cups salsa
Tips
*adjust salt and citrus to taste for all recipes
*salt amounts will vary if you are using regular table salt
*Spice lovers add an extra 1 or 2 peppers to bring the heat ????
*Tomatillos have a lot of pectins, when you refrigerate you’ll notice the salsa gets thicker. Not to worry! Just mix and continue with your salsa : )

The red salsa can also be used to serve on top of chicharrones preparados( my grandma used to make it that way) both salsas are seriously delicious on every taco! Even on just a tortilla by itself! You can adjust the spicyness to your liking- add more chiles to make it more spicy or add less Chile arbol to make it less spicy- for me the amount I use is perfect as my mom would say salsa no es salsa si no pica ????
