Pesto Pasta has always been one of my favourite pasta recipes ever.. Today I will be sharing you my other version of Pesto Spinach Fettuccine Pasta and this time with Seafood. It’s a very healthy and delicious pasta.
Pesto is a great way to add a ton of flavors to dinner and I especially love making pesto with fresh spinach . This recipe is made with healthy ingredients such as baby Spinach, Spinach Fettuccine pasta , Shrimp, Scallop Squid , Basil Pesto sauce, and top it off with plain cashew nuts and parmesan cheese , This recipe packs lots of fresh flavor and nutrition and comes together very quickly.
Spinach is an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach.
Pesto is a delicious sauce often made from basil, olive oil, garlic, . All of these ingredients have health benefits and can be included in a well-balanced, healthy diet. Ingredients such as the olive oil and pine nuts..
Seafood is a high-protein food that is low in calories, total fat, and saturated fat. High in vitamins and minerals, seafood has been shown to have numerous health benefits. For example, recent studies have shown that eating seafood can decrease the risk of heart attack, stroke, obesity, and hypertension.
Cooking tips :
You can use Canned Tuna as substitute for seafood
Cook spaghetti noodles as per package instruction just until al dente. Drain water and set aside.
Ingredients:
500g Spinach Fettuccine pasta
3 tbsp olive oil.
1/4kg large shrimps, peeled and deveined
1/8kg squid rings, cut into 2 , about 1.5 inch long
1/4kg scallop, cleaned
1/8 cup fresh organic baby spinach( picked up from our backyard )
5cloves garlic, minced
1 red bell pepper, julienned
190g mushroom, thinly sliced
1 tbs black pepper
1/4 tsp salt if needed
1 tbs ground black pepper
190g basil pesto sauce
60g plain cashew nuts for garnish ( optional )
6 tbs Parmesan cheese ( divided )
Seared Scallops with Pesto Pasta | An Elegant and Easy Dish

Pesto Ingredients:
• 1 cup packed fresh basil leaves
• 1/2 cup grated Parmesan cheese
• 1/4 cup pine nuts
• 2 cloves garlic
• 1/4 cup olive oil
• ½ tsp. of Salt
Instructions:
1. Wash the basil leaves and dry them thoroughly on a paper towel.
2. Place the garlic, Basil and pine nuts in a food processor and place processor on high speed.
3. Then slowly pour the oil until you have a smooth, creamy consistency.
4. Add Parmesan cheese and blend for 5 seconds. Done!

How to Make FRESH BASIL PESTO Like an Italian
Fresh basil pesto is so easy to make and one of the most versatile condiments in Italian cooking. It originated in the region of Liguria and when made fresh the salty flavour just dances on your tastebuds.
When making your own pesto at home, the trick is to use fresh basil leaves – either from your own garden, the farmers market or your neighbours!
Be warned, once you start blending the basil, your kitchen will be filled with the most delicious aroma and as soon as you combine the pine nuts and parmigiano you will not be able to resist a few scoops almost right away!
