How To make Shchi (Cabbage Soup)
10 Porcini; well rinsed
3 lb Brisket
2 lb Marrow bone, cracked
10 c ;water
1 Onion, large
1 Carrot, med; peeled
1 Celery stalk w/leaves; chopp
1 Parsnip; peeled

4 c Cabbage; shredded

2 tb Tomato paste
1 Carrot, med; julienne
1 Celery stalk; chopped
1 Turnip, large; peel/diced
16 oz Tomato, plum
Salt; to taste Pepper, black; to taste Garlic clove; minced Dill, fresh; finely chopped Sour cream

SOUP:
Approx. Cook Time: 8:00 Soak the porcini in 1 cup water for 2 hours. Drain them, pat dry with paper towels, chop fine, and set aside. Discard the liquid or save for another use. To make the stock, in a large soup pot, bring the meat, bones, and water to a boil over high heat, periodically skimming off the foam as it rises to the top. Add the remaining stock ingredients, and reduce the heat to low. Simmer, covered, until the meat is tender; about two hours. Meanwhile, melt half the butter in a deep skillet over medium heat> Add the cabbage and sauerkraut and saut# for 10 minutes, tossing and stirring regularly. Add one cup hot stock (it doesn't have to be fully cooked) and the tomato paste. Cover and simmer over low heat for 35 to 40 minutes. Melt the remaining butter in another large skillet and saut# the carrot, onions, celery, turnip, and mushrooms until soft and lightly browned; about 15 minutes. When the stock is ready, strain it into a clean pot. Reserve
the meat and discard the other solids. Add the sauerkraut and cabbage, the vegetable mixture, and tomatoes to the stock. Season with salt and pepper, stir, and cook, covered, over medium-low heat for 20 minutes. Cut the meat into bite-size pieces and add it to the soup, along with the minced garlic. Simmer for another five minutes. Let stand for at least 15 minutes, and preferably a day and a night, before serving; refrigerate, covered, and reheat slowly if serving the next day. Shchi (Russian: щи, IPA: (About this soundlisten)) is a Russian-style cabbage soup. When sauerkraut is used instead, the soup is called sour shchi, while soups based on sorrel, spinach, nettle, and similar plants are called green shchi (Russian: зелёные щи, zelyoniye shchi). In the past, the term sour shchi was also used to refer to a drink, a variation of kvass, which was unrelated to the soup. Shchi is a traditional soup of Russia where it has been known as far back as the 9th century, soon after cabbage was introduced from Byzantium. Its popularity in Russia originates from several factors. Shchi is relatively easy to prepare; it can be cooked with or without various types of meat; and it can be frozen and carried as a solid on a trip to be cut up when needed. As a result, by the 10th century shchi became a staple food of Russia, and a popular saying sprang from this fact: Щи да каша — пища наша. (Shchi da kasha — pishcha nasha Shchi and kasha are our food). The major components of shchi were originally cabbage, meat (beef, pork, lamb, or poultry), mushrooms, flour, and spices (based on onion and garlic). Cabbage and meat were cooked separately and smetana was added as a garnish before serving. Shchi is traditionally eaten with rye bread.
The ingredients of shchi gradually changed. Flour, which was added in early times to increase the soup's caloric value, was excluded for the sake of finer taste. The spice mixture was enriched with black pepper and bay leaf, which were imported to Russia around the 15th century, also from Byzantium. Meat was sometimes substituted with fish, while carrot and parsley could be added to the vegetables. Beef was the most popular meat for shchi in Russia, while pork was more common in Ukraine. The water-to-cabbage ratio varied and whereas early shchi were often so viscous that a spoon could stand in it, more diluted preparation was adopted later.
Shchi - Russian Sauerkraut Soup
Ingredients:
Approximately 6 beef ribs for broth (you can use pork, or chicken or make the soup vegetarian) you can add onion and carrot to your broth while it cooks. If you add salt use very little because the sauerkraut is salty! Cook for 1 1/2 to 2 hours, skimming off foam, do not boil.
10 cups of beef broth+ 1 cup for sauerkraut
3 large potatoes
2 pounds sauerkraut drained
2 heaping tbsp tomato paste
2-4 large onions
3 carrots
oil for sauteing onions and carrots
2 to 4 tbsp of butter
2-6 tbsp Wondra or all purpose flour(depending how thick you want your soup)
2-4 dried bay leaves
1 tsp whole black peppercorns
Crushed garlic to taste
salt and pepper to taste
fresh parsley and dill
Optional - Barley, Oatmeal, mushrooms
Sour cream for serving

Shchi is a Russian-style cabbage soup.
When sauerkraut is used instead, the soup is called sour shchi.
Traditionally, shchi appeared in Kievan Rus around 9th century, soon after cabbage was introduced from Byzantium. The recipe, however, differed in many aspects and was not popularized until late 16th century.
Today I would like to share my grandmother's recipe, which was passed on to her by her mother. So it is very special.
RUSSIAN SOUR SHCHI RECIPE
For beef broth you will need:
1lb beef shank
2 lb flank or sirloin beef
1 onion
1 parsnip
1 carrot
2 celery stalks
Spices: peppercorns, bay leaves and coriander
salt and pepper to taste, dry herbs.
Make beef broth as directed in the video.
For the sauté you will need:
1 onion(cubed)
1 carrot(shredded)
1 parsnip(shredded)
1 tbsp tomato paste
1 cup tomato puree
salt and pepper to taste
Sauté everything and set aside.
For the soup you will need:
2 medium carrots
1 medium parsnip
1 medium celery root
4-5 medium potatoes
2 small turnips
1 medium onion
1 bunch dill
1 bunch parsley
salt and pepper to taste.
For serving soup you will need:
Sour cream
chopped green onion
I used 8.5 qz pot
You can divide all ingredients in half if you do not have to make that much!
