How To make Shchi (Cabbage Soup)
10 Porcini; well rinsed
3 lb Brisket
2 lb Marrow bone, cracked
10 c ;water
1 Onion, large
1 Carrot, med; peeled
1 Celery stalk w/leaves; chopp
1 Parsnip; peeled
Bouquet garni Salt; to taste 6 ts Butter, sweet
4 c Cabbage; shredded
2 1/2 c Sauerkraut, packaged (not ca
2 tb Tomato paste
1 Carrot, med; julienne
1 Celery stalk; chopped
1 Turnip, large; peel/diced
16 oz Tomato, plum
Salt; to taste Pepper, black; to taste Garlic clove; minced Dill, fresh; finely chopped Sour cream
STOCK:
SOUP:
Approx. Cook Time: 8:00 Soak the porcini in 1 cup water for 2 hours. Drain them, pat dry with paper towels, chop fine, and set aside. Discard the liquid or save for another use. To make the stock, in a large soup pot, bring the meat, bones, and water to a boil over high heat, periodically skimming off the foam as it rises to the top. Add the remaining stock ingredients, and reduce the heat to low. Simmer, covered, until the meat is tender; about two hours. Meanwhile, melt half the butter in a deep skillet over medium heat> Add the cabbage and sauerkraut and saut# for 10 minutes, tossing and stirring regularly. Add one cup hot stock (it doesn't have to be fully cooked) and the tomato paste. Cover and simmer over low heat for 35 to 40 minutes. Melt the remaining butter in another large skillet and saut# the carrot, onions, celery, turnip, and mushrooms until soft and lightly browned; about 15 minutes. When the stock is ready, strain it into a clean pot. Reserve
the meat and discard the other solids. Add the sauerkraut and cabbage, the vegetable mixture, and tomatoes to the stock. Season with salt and pepper, stir, and cook, covered, over medium-low heat for 20 minutes. Cut the meat into bite-size pieces and add it to the soup, along with the minced garlic. Simmer for another five minutes. Let stand for at least 15 minutes, and preferably a day and a night, before serving; refrigerate, covered, and reheat slowly if serving the next day. Hi, guys! In this video, we're gonna learn how to make one of the most famous and classical russian soup - shci. Shchi is also one of the oldest russian recipes, it is known since X century, more than 1000 years ago! Shchi is cooked from raw or picled cabbage, with any kind of meat and traditional vegetables, such as bulb onion and potatoes. In Russia, we have a very old proverb that literally translates as Shchi and porridge are our main food.
I'm Dennis, and I've been learning English for almost two years by this moment, so I've decided to start making videos like this just for some practice. I speak really funny and slowly and I keep making stupid mistakes in basic grammar all over the place, but I'm sure that the real fluency only might be achieved when we are not afraid to look ridiculous and foolish. I believe that we should start write and speak our target language even though we don't have enough skills and self-confidence. I'll be so happy if my videos inspire some of you guys to speak English or any other target language without irrelevant struggling and hesitancy.

Щи суточные старорусские - блюдо особенное: от одного только его названия веет «преданьями старины глубокой». Кстати, оно является предметом ожесточенных споров между кулинарами-историками. Почему эти щи называют «суточными»? Одни уверены, что речь идёт о многочасовом топлении супа в печке. Другие утверждают, что щи назвали «суточными» потому, что капусту для них оставляли на ночь на морозе, после чего добавляли в бульон. А кто-то считает, что экстремальному охлаждению в течение ночи подвергалось уже готовое блюдо! Но все участники дискуссии сходятся в одном мнении: суточные старорусские щи отличаются невероятно насыщенным вкусом, который достигается только благодаря основательному подходу к их приготовлению.
Современные повара, детально разобрав старинный способ приготовления суточных щей, объясняют их особый вкус и пользу с профессиональной точки зрения.
Долгая варка бульона позволяет выварить из мяса и костей всё самое ценное. Бульон в процессе приготовления насыщается особыми питательными веществами: фосфатами, коллагеном и жирорастворимыми витаминами.
Суточный цикл приготовления самым положительным образом влияет на вкус капусты и корений. Из овощей выделяется пектин, за счет которого щи становятся наваристыми, а бульон приобретает тягучесть.
По этой причине суточные щи почти никогда не заправляют мукой или крупой. Так же в суточные щи не принято добавлять картофель.
Низкие температуры благоприятным образом действуют на кислую капусту. Они уменьшают её кислотность за счет высвобождения сахаров. И к тому же делают капусту гораздо мягче, убирая острый, характерный капустный вкус и дух.
Очень интересна сама история создания суточных щей. В давние времена почту развозили казённые ямщики. По законам Российской империи станционный смотритель обязан был предоставить таким ямщикам в любое время дня и ночи две вещи: свежих лошадей и кипяток. Для этого постоянно грели большие самовары. Накормить - это было не обязательно. Но как же ямщики выходили из этого положения? Оказывается, они заранее дома готовили капустный привар. Капустный привар - это томлёная в печке квашеная капуста. За время томления она размягчается, теряет свой белый цвет и приобретает новый - коричневый. Также появляется аромат карамелизированных сахаров, которые находятся в капусте. И вот такой капустный привар брали с собой в дорогу ямщики. Получив положенный кипяток, они заливали им приварок, нагревали его и получались очень сытные и вкусные щи. А когда ямщики возили этот привар в крепкие русские морозы, то оказалось, что он приобретал вкус намного вкуснее и нежнее, чем обычный.
Рецептов суточных щей существует множество. Все они существенно отличаются друг от друга. Но есть три правила, которые нельзя исключить из рецепта и благодаря которым суточные щи заслужили народную любовь:
Основа суточных щей - это настоящая квашеная капуста.
Обязательно длительное томление щей.
Сильное охлаждение суточных щей на сутки. Лучше, если будет полная заморозка.
Поэтому вооружитесь терпением и попробуйте приготовить! Наслаждаться суточными щами можно только спустя сутки, теперь можно есть! Ждать долго, но отменный вкус щей будет вам наградой!
Для приготовления 9-10 порций щей нам понадобятся:
Для бульона:
Говяжья грудинка - 1 кг
Вода - 3,0-3,5 л
Лук - 1 шт.
Морковь - 1 шт.
Лавровый лист - 1 шт.
Чёрный перец горошком - 10-12 шт.
Для приварка:
Квашеная капуста - 1 кг
Морковь - 1 шт.
Лук - 1 шт.
Томатная паста - 150 г
Растительное масло - 60 мл (4 ст.л.)
Сахар - 1-2 ч.л.
Бульон - 250-300 мл
Для подачи:
Соль - по вкусу
Молотый чёрный перец - по вкусу
Петрушка - несколько веточек
Укроп - несколько веточек
Чеснок - 4 зубчика
Сметана - по вкусу
