What’s your favorite meal with chickpeas? For us, this one-pan #CoconutChickpeaStew is super comforting and incredibly delicious.???????? This is a great and simple meal that’s always loved by family and friends. ???? Definitely a good and easy recipe to try this weekend. ????
COCONUT CHICKPEA STEW ✨
400 g chickpeas in can
1 cup frozen spinach
3/4 cup tomato sauce
400 ml coconut cream
2 tsp ground cumin
2 tsp smoked paprika
2 tbsp. maple syrup
1 vegetable bouillon cube
1 yellow bell pepper (capsicum), sliced
1 medium-sized onion, diced
4 cloves garlic, minced
1 tbsp. parsley flakes
1 tbsp. water
1 tsp salt
1 tsp ground black pepper
a pinch of chili flakes
Method
In a cast iron skillet, sauté the garlic, onion and yellow bell pepper. Add the chickpeas (drained and rinsed) and season with salt and pepper to taste. Mix it well. Add the ground cumin, smoked paprika, maple syrup and frozen spinach. After that, add the tomato sauce, 1 tbsp. of water and the vegetable bouillon. Pour the coconut cream into the pan. Add parsley flakes, a pinch of chili flakes and stir to combine. Let it simmer for 5-8 minutes before serving. Transfer in a bowl and enjoy with steamed rice.
