How To make Spinach Lasagna (Popeye's)
12 lasagna noodles
2 TB water
1 md onion
chopped
1 clove garlic :
minced (1 to
2 )
1 cn tomato sauce (8 oz)
1 cn tomato paste :
(6 oz)
3/4 c water
1 TB beef bouillon
1 ts sugar
1/2 ts dried basil
1/2 ts dried oregano
1/8 ts pepper
12 oz fresh spinach (about 4
: cups) ** 2 c nonfat cottage cheese
2 eggs :
or equivalent
3 c nonfat mozzarella cheese --
: shredded; (12 oz) 1/3 c grated Parmesan cheese
(serves 6) 1. Cook noodles in boiling water. Drain and rinse in
cold water. Set aside. Combine water, onion and garlic in a 1 1/2 quart microwave-safe bowl. 2. Microwave (high), uncovered, 3-3 1/2 minutes or
until tender, stirring once. Stir in tomato sauce and paste, water, bouillon, sugar, basil, oregano and pepper. Cover with plastic wrap. 3. Microwave (high) 8-9 minutes or until mixture boils
several minutes, stirring once. Set aside. 4. Wash spinach and remove large stems. Place in 2
quart microwave bowl. Cover with plastic wrap. 5. Microwave (high) 3 1/2-4 minutes or until steaming
hot. Drain well by pressing leaves to drain juices. Chop coarsely. Stir in cottage cheese and eggs. 6. To assemble, layer half the noodles in a 12x8"
baking dish. Top with 1/2 the sauce mixture, 1.5 cups mozzarella cheese, half the spinach mixture, rest of the noodles, rest of the spinach, rest of cheese, rest of sauce. Cover with waxed paper. 7. Microwave (high) 5 minutes. Then microwave
(medium-high, 70%) 12-15 minutes or until heated in center (150-160 degrees). Remove waxed paper. Sprinkle with Parmesan cheese. 8. Microwave (high) uncovered 3-4 minutes or until
cheese is melted. Let stand 5-10 minutes before cutting. ** Frozen chopped spinach can be substituted for fresh. Use a 10 oz package and microwave in package 3 1/2 - 4 1/2 minutes or until thawed. Omit cooking in

This is another one of my fantastic no cook purees that’s really good for baby. Spinach is packed with iron, folic acid and vitamin C, full fat Greek yogurt is a source calcium and protein while mango adds a sweetness your baby will love. Great blitzed to a fine puree but you can alter the texture depending on what stage of weaning your baby is at.

I am's what I am's... aint that the truth! Who knew Popeye was so poetic. And so is this Spinach Dip Pizza recipe. Worth writing a haiku or two over, make sure you bust this out at your next dinner party. Not only are the slices chip shaped, you don't even need any darn chips to begin with.

Parmesan and mozzarella cheese, with sour cream and cream cheese. It is exactly as creamy as it sounds, and just as delicious. Plus there's spinach in it so it's gotta be healthy, right? Well healthy or not here I come!

SPINACH DIP PIZZA
Ingredients
TOPPINGS
2 cups Spinach (fresh)
1½ cups Mozzarella cheese
1 cup Plain cream cheese
1 cup Sour cream
½ cup Parmesan cheese
1 tbsp Parsley (fresh)
1 tsp Garlic
½ tsp Salt
¼ tsp Black pepper
WILD PIZZA DOUGH
2 cups Sourdough starter (active)
1 cup Bread flour
1 tsp Salt
Instructions
WILD PIZZA DOUGH (1 hour)
1). Make your dough by mixing the sourdough starter, salt, and bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky).
2). Knead the dough for 30 seconds, flour lightly as needed.
3). Place the wild dough in a lightly floured bowl and cover with a towel, set aside for 1 hour. (The pizza steel or stone needs to preheat for 1 hour as well, so preheat oven to 550°F after you finish making your pizza dough).
PIZZA
1). Preheat oven to 550°F with baking steel or pizza stone inside the oven.
2). Bring cream cheese to room temperature, about 1 hour.
3). Steam spinach 1 minute, let cool and squeeze out excess water, then chop.
4). Mince garlic and chop parsley.
5). Make your spinach dip. In a large bowl, add cream cheese, sour cream, mozzarella and parmesan cheese, spinach, parsley, garlic, salt, and pepper, then mix well.
6). Flour surface and roll out the dough. Put a floured pizza peel underneath the dough.
7). Add 2 cups spinach dip to pizza.
8). Bake pizza at 550°F for 8-10 minutes, by sliding pizza onto baking steel with pizza peel.
9). Remove pizza from oven with pizza peel. Let cool for 5 minutes, slice and enjoy!
