How To make Strawberry Parfait Pie
1 C Boiling Water
1 3 Oz. Pkg. Lemon Gelatin Powder
1 Pt Vanilla Ice Cream
1 C Strawberries* -- sliced
1 Baked Graham Cracker Pie Shell
*May fresh or frozen strawberries, or may substitute other fruit of choice such as blackberries, peaches, etc.
Heat one cup of water to boiling in a two-quart pan; remove from heat; add one package of lemon gelatin. Stir in one pint of vanilla ice cream; stir until melted. Chill this mixture until it thickens (about 30 minutes). Fold in strawberries. Turn into a cooled graham cracker pie shell. Pie will be ready in half an hour. Must keep refrigerated.

Strawberry Shortbread Parfait Recipe~ Noreen's Kitchen
Greetings! Let's Use some of that homemade strawberry pie filling/topping to make a super quick dessert that will have them thinking you slaved all day. I promise I won't tell if you won't!
This is a simple a delicious parfait that looks fancy and takes no time at all to throw together. You need the pie filling, some instant vanilla pudding, some crushed shortbread cookies and some whipped cream. That's it. Layer in tall cups or glasses and you are good to go.
This is also a really good dessert to make for a bake sale or to serve to a crowd because for the most part you can do them up in advance and just top with the whipped cream right before serving. Just make sure you have room in your fridge if you are holding them for any amount of time because these will spoil.
This layers the tart strawberry filling with creamy vanilla pudding, and crunchy shortbread cookies. Different from a shortcake and with a nice crunch. If holding them, the shortbread becomes soft and delicious and give a richness that you don't get from an angel food cake.

Homemade Strawberry Pie Filling Recipe ~ Noreen's Kitchen
Greetings! When I asked if you wanted to see the strawberry pie filling/topping recipe, the answer was a resounding yes! So today I am sharing with you a very simple and delicious recipe for strawberry pie filling that you can use to put in a pie shell for a fresh strawberry pie, top your ice cream, angel food cake, pound cake or yes, even your funnel cake!
You are going to love this and it goes together super fast. Make it the day before if you want to put it in a pie for best results. This brings together the fresh taste of the strawberry and the sweet deliciousness of the glaze. You can also use this glaze to make that famous pie from Marie Callendars or Bob's Big Boy. Just use whole strawberries, allow the glaze to cool completely and glaze away!
This pie filling is not suitable for canning due to the addition of the corn starch. If you wish to can strawberry pie filling, you will need to research a recipe for it using clear jel and the proper procedure for doing that.

Brownie Recipe
Ingredients
½ lb | 250g | Punnet of Strawberries
2 Tablespoons Sugar
125g | 4 oz Cream Cheese
2 Tablespoons Icing Sugar | Powdered Sugar
200ml | ¾ Cup Heavy Cream
2-3 Brownies (recipe is on my website)
Instructions
Remove the tops from the strawberries and cut them into quarters and place in a small bowl.
Sprinkle over the sugar and use a spoon to toss the strawberries until they are evenly coated.
Leave the strawberries to sit for about 30 minutes.
Add the cream cheese to a bowl and stir to soften.
Measure out the sugar and add to the cream cheese. Fold together until well combined and smooth.
Switch to using a whisk and pour in the heavy cream. Beat with the whisk until the mixture thickens to whipped cream consistency.
Cut the brownies up into bite sized pieces and place into the bottom of two glasses.
Follow with the macerated strawberries and cheesecake filling.
Garnish with strawberries, brownies, and mint leaves before serving.
Notes
If you don't have brownies you can use store bought or any other type of cake baked goods.
You can use frozen strawberries in place of fresh. Leave them to come up to room temperature before using.
