TRX:
I am a big fan of BBQ Sauce, but most Barbeque sauces out there have tons of High Fructose Corn Syrup as well as way too many preservatives in them which make them unhealthy. I decided to tackle this task of making a healthy version of a KC Masterpiece, except It will have my own spin on it. It will be healthy, natural, low in sugar and fat, and full of vitamins and minerals.
Here are the Ingredients --
½ - 2/3 Sweet Onion
6-8 Garlic Cloves
24 Roma Tomatoes
2-4 Habenero Peppers
1-2 Lemons Squeezed
½ tsp Ground Clove
1 tsp Ground Pepper
2 tsp Sea Salt
1 tsp Cayenne Pepper
1 tsp Paprika
1 T Molasses
1 T Brow Sugar
½ tsp Turmeric
2 T Worcestershire Sauce
¼ C Rice Vinegar Unseasoned, unsalted
2 T Mirin
¼ C. Scotch (or you can use spiced Rum )

RECIPE: BARBECUE (BBQ) SAUCE
I was going to upload this on Sunday, but didn't get around to it as Sunday the 17th was my birthday (Happy birthday to me!).
In this video I'm going to show you how I make Barbecue (BBQ) Sauce. I love this recipe because you just throw all the ingredients into a saucepan and cook it down. This makes 500ml (2 cups) of sauce, but can easily be doubled for a larger quantity.
This can be stored in jars on the shelf or transferred to a squeeze bottle for instant use. For this batch, I used a squeeze bottle.
I tried this on some barbecued chicken and it was absolutely amazing. this can be consumed as is with barbecued meats, brushed on wings, or used as a marinade.

BARBECUE (BBQ) SAUCE:
INGREDIENTS:
200ml tomato ketchup
200ml apple juice
100ml (Maybe extra) Bourbon
Juice from 2-3 oranges (150ml)
200g sugar (Brown sugar is preferred but I used Coconut Sugar)
4 tablespoons Worcestershire Sauce
4 tablespoons Balsamic Vinegar (I used half balsamic glaze and half red wine vinegar)
2 heaped teaspoons Dijon mustard
1 teaspoon Chipotle Tabasco (Use regular hot sauce and smoked paprika as an alternative)
1/4 teaspoon salt
METHOD:
1. Put all ingredients into a large saucepan (Preferably non-stick).
2. Bring to the boil, and turn heat down to avoid sauce from boiling over.
3. Simmer/low boil for 20 minutes until sauce has thickened and reduced by around half.
4. Test sauce on the back of a spoon to ensure proper consistency.
5. Allow to cool and store in jars or squeeze bottle for immediate use.

Spicy BBQ Sauce made with TABASCO® Sauce
This is a great staple to add to anyone’s smoking, grilling or barbecuing repertoire. It gets its flavourful kick from TABASCO® Sauce, creating a great BBQ sauce with a punch! - Chef Brad McDonald, Shotgun, London.
Serves: 700ml
Prep: 10 mins
Cook: 1.5 – 2 hours
Ingredients:
30ml TABASCO® Sauce
530g ketchup
40g tomato purée
360ml apple cider vinegar
60g yellow mustard
8g garlic powder
8g salt
240ml water
454g light brown sugar
8g ground black pepper
10g cayenne pepper
Method:
Combine all ingredients in a large saucepan.
Bring to the boil quickly, stirring constantly, then lower the heat to a simmer.
Cook slowly until the sauce becomes thick, glossy and a deep burgundy colour (it should reduce by a little more than a third).
Remove from the heat and allow to cool.
Serve alongside any barbecued meats – smoked Jacob’s Ladder ribs go really well with this sauce.
