How To make Tropical Treat Cake
1 lg Orange, unpeeled
1 lg Banana
1 c Raisins
1 3/4 c All purpose flour
1 ts Baking soda
1/2 ts Cinnamon
1/4 ts Salt
1/2 c Shortning or margarine
1 c Granulated sugar
2 Eggs
1/2 c Buttermilk
1 ts Vanilla
Cut unpeeled orange into pieces; remove seeds. Combine orange, banana, and raisins in food processor until coarsely chopped. Combine flour, soda, cinnamon and salt. Cream shortning, sugar and eggs in large bowl and beat until light and fluffy. Stir in fruit mixture. Add dry ingredients alternately with buttermilk and vanilla mixing lightly after each addition. Spread batter into a greased 9" square baking pan. Bake at 350 F. for 55-60 minutes. (It baked in 35 min.in my oven.) Homemakers Magazine Oct/1994 -----

These from-scratch coconut lime cupcakes are a tropical treat that’s perfect for summer.
Hey y’all! Today, I’m showing you how to make completely homemade coconut lime cupcakes. These tropical cupcakes are perfect for any summer party. In these from-scratch cupcakes, I use coconut milk to make the batter super creamy (it also adds the perfect hint of coconut flavor!). Then, I frost the cupcakes with a homemade cream cheese lime frosting. If you don’t like cream cheese frosting, a regular vanilla buttercream (with lime, of course) works just as well!
Making cupcakes from scratch is so much easier than it sounds! These coconut lime cupcakes are light and fluffy, tart and sweet. Pair with a margarita and head out to the pool and you are set for the day honey! Find the full recipe on my blog at IHeartRecipes.com and don’t forget to subscribe!

0:26 - Sprinkle in sugar.
0:30 - Mix well.
0:36 - Beat in one egg at a time.
0:50 - Mix until creamy.

1:04 - Sprinkle in lime zest.
1:08 - Mix until well combined.
1:11 - In a separate bowl, add cake flour.
1:15 - Sprinkle in baking powder and salt.
1:20 - Whisk the ingredients together.
1:27 - We’ll be using coconut milk.
1:32 - Alternate the dry ingredients with the coconut milk.
1:45 - Scrape down the sides of the bowl.
1:50 - Mix until creamy.
1:59 - Pour the batter into baking cups.
2:14 - Bake the cupcakes until done.
2:24 - Let the cupcakes cool.
2:29 - Continue cooling on a cooling rack.
2:31 - To start the frosting, mix butter and cream cheese.
2:40 - Pour in lime juice and vanilla extract.
2:46 - Slowly mix in confectioners’ sugar.
2:53 - Mix until creamy.
2:56 - Frost the cupcakes.
3:16 - Top off with a lime wedge.
3:20 - Sprinkle on toasted coconut flakes.

In this series of three videos, we will show you three delicious ways to use Black Sapote fruit (aka ‘Chocolate Pudding Fruit’).
Black Sapote is a tomato-shaped green tropical fruit with a soft and decadent brownish-black pulp. It has a mild and slightly sweet flavor. Native to the coastal regions of Mexico and Central America, Black Sapote also grows very well in South Florida.
