In a large soup kettle, cook the ground round, sausage, onions, red and green pepeprs, chili peppers, and garlic over medium-high heat, stirring often, until the meat is seared (but not browned), about 10 minutes. Pour off excess fat. Add the chili powder, salt, oregano, cumin, and bay leaves and stir for 1 minute. Add the tomatoes with their puree, breaking up the tomatoes with a spoon. Bring to a simmer. Reduce the heat to low and cook, stirring often, until the liquid is reduced, about 1-1/2 hours. In a small bowl, combine the cornmeal and 1/2 cup of water. Stir the cornmeal mixture and the pink and black beans into the chili.Cook, stirring occasionally, until the chili is thickened, about 10 minutes. (The chli can be made up to 3 days ahead. If desired, scrape off and discard the solidified fat that

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Two-bean chili recipe | Ohio State Medical Center
What you’ll need:
1 tbsp vegetable oil
1 small jalapeno, minced
1 small red onion, finely diced
2 tsp red wine vinegar
1 large clove garlic, minced
1 ¼ cups low-sodium vegetable or chicken broth
1 cup canned crushed roasted tomatoes
1 ½ tbsp chili powder
¼ tsp Chinese five-spice powder or ground cinnamon, optional
Two 15-oz cans of beans, rinsed and drained
Directions:
Heat the oil in a large saucepan over medium-high heat;
Add jalapenos
*Tip: remove seeds to reduce spicy taste or add seeds if desired
Add onions and vinegar and cook, stirring until softened.
Add the garlic and cook about 30 seconds.
Stir in the broth, tomatoes, chili powder and five-spice powder and increase to high heat.
Bring to a full boil and cook for 1 minute.
Stir in the beans and return to a full boil.
*Tip: drain beans well to remove sodium content
Reduce the heat to medium and simmer until slightly thickened but still soupy.
