Ingredients:
2-3 Chicken Breasts sliced
1 tablespoon Olive Oil
1/4 cup Italian dressing
1/4 cup Balsamic Vinegar
1 1/2 tablespoon Honey
1/8 teaspoon Crushed Red Chili Pepper Flakes
1 teaspoon Salt
1 pound Asparagus
3/4 cup shredded carrots
3/4 cup Grape Tomatoes
1- 20 ounce package cheese Tortellini cooked according to package instructions
Fresh minced basil optional, for garnish
Directions:
Cook the tortellini according to the package directions, drain and set aside in a large bowl.
Combine Italian dressing, balsamic vinegar, honey, red pepper flakes and whisk together in a small bow, or shake in a sealed jar. Set aside,
Meanwhile, melt the olive oil in a large frying pan over medium-high heat. Add sliced chicken breast, season with salt and pepper and cover. Cook for 2-3 minutes per side, or until browned and cooked through.
Add ¼ cup sauce to the chicken and bring to a boil. Simmer for a minute, turning the chicken to make sure it coats all sides. Add the chicken to the cooked tortellini and toss.
Add chopped asparagus to the pan. Cook through for 3 minutes, stirring occasionally to prevent burning, and add the carrots. Cook until vegetables tender, but still a little crunchy!
Add the cooked vegetables and the sliced grape tomatoes to the chicken and tortellini, then add the rest of the sauce to the pan. Simmer and cook down for just a minute or two until it thickens up.
Gently toss with the pasta, chicken and veggies.
Garnish with fresh basil, if desired, and serve immediately.

Fussy Eaters ???????? This recipe is great for getting fussy eaters to eat salad if they usually like this tortelloni hot. If they don’t usually like salad dressing, leave theirs undressed and instead give them a little in a mini bowl. Then, they can either test it out as a dip or add to their plate if they like. For fussy eaters who don’t like tomatoes (or spinach), add a “safe” veg to their plate that they do like. If they don’t eat veg at all, grapes are a good option to go alongside this salad.
Baby weaning ???????? Serve their salad deconstructed and without the dressing. You can serve the tortelloni’s whole and the cherry tomatoes cut into eighths. For 6-9 month olds who will struggle to pick small pieces of tomato up, it’s best to cut wedges of a large tomato. The spinach leaves can be served as they are. You can give little one some walnuts, so long as they don’t have a nut allergy. You’ll need to crush theirs in a food bag using a rolling pin or meat mallet.

You’re going to kick off this recipe with cheese tortellini pasta. Cook the pasta according to package directions and watch your salt content in the pasta water! This fresh pasta will pick up on that salty flavor way more than dry pasta would.
Next, pick your favorite Italian or Greek vinaigrette, drizzle it over the pasta, toss it all together, and let’s move it along to the rest of the ingredients!
You’ll start by slicing into a handful of grape tomatoes and red onion. Then, you’ll need the help of a few Mediterranean pantry staples: Pepperoncini peppers (or banana peppers), pitted Kalamata olives, and marinated artichokes. Give all of those ingredients a rough chop and add them to the bowl!
Last, but not least, pepperoni! Or really, any Italian cured meat will do. Cut the sliced deli meat into quarters and add them to the mix as well.
