How To make Watercress & Leek Soup
1 lb Leeks, trimmed, washed &
-- sliced 2 pk Watercress, washed
1/2 oz Margarine
3 1/2 c Stock
1 ts Cornstarch
Salt & pepper Fry leeks & watercress in margarine in a large pot over a low heat for 15 minutes. Keep a lid on the pot, but stir occasionally, don't let it brown. Add stock, bring to a boil & simmer for 10 minutes. Dissolve cornstarch in a little cold water & add to the soup. Blend till smooth, reheat & serve.

Whilst putting my narrowboat through lock 39 on the Trent and Mersey I stumbled upon a decent amount of watercress, so I made some soup.
Ingredients:
watercress, onion, butter, sugar, chicken stock (or veg stock if you prefer), milk, cream, salt and pepper

Watercress soup with poached egg & chive oil
This delicate soup is easy to eat with plenty of fragrant flavour. Watercress is high in vitamin A (beta-carotene) and is a good source of protein. The addition of a poached egg provides a nutritional boost of protein to this luscious green dish.
