How To make Wine and Chicken Livers
2 T Butter or margarine
1 1/2 lb Chicken livers
1/2 t Salt
1/8 t Pepper
2 1/2 T Flour
1/4 c Minced onion
2 T Catsup
3/4 c Dry white wine
1. Place 2 tablespoons butter in a 10-inch, heat-resistant, non- metallic
skillet. Heat, uncovered, in Microwave Oven 30 seconds. seconds. 2. In a plastic bag combine flour, salt and pepper. Coat each chicken liver
with seasoned flour and place in skillet with melted butter. 3. Heat, uncovered, in Microwave Oven for 4 minutes.
4. Turn livers and heat, uncovered, an additional 3 minutes or until
chicken livers are browned. 5. Add onion, catsup and wine. Heat, covered, for 1 1/2 minutes. Stir.
6. Heat, uncovered, for an additional 1 1/2 minutes. Serve with cooked
rice. Tip: If chicken livers begin to pop, pierce them with the tines of a fork before continuing to cook. The popping is just the steam escaping through the thin membrane surrounding the liver.

✅ Ingredients:
• chicken liver – 1,8 lb | 800 g
• onion – 10,5 oz | 300 g
• garlic – 2 cloves
• sour cream – 14 oz | 400 g
• mustard – 2 tsp
• butter – 1 oz | 30 g
• salt to taste
• pepper to taste
• dried oregano – ½ tsp
• dried basil - ⅓ tsp
• dried thyme - ⅓ tsp

???? Preparation:
1. Cut the chicken liver into halves, remove the veins and fragments of green-yellow to have it not bitter.
2. Cut the onion into half rings.
3. Dry well the liver with paper towels and cut into pieces.
4. Heat a pan with the butter, add the onion and fry over medium heat for 5-7 minutes.
5. Push the onion to the sides making a space in the middle of the pan.
6. Fry the chicken liver by parts for 5 minutes over medium heat, not all the amount at a time as it will be boiled not fried then.
7. Add salt and ground black pepper to taste, the minced garlic, mustard, oregano, basil and thyme.
8. Stir and fry for a minute over medium heat.
9. Add the sour cream, stir and simmer over medium heat for 10 minutes stirring occasionally.
10. Serve the sour cream chicken liver hot having sprinkled with chopped-up greens. Mashed potato, pasta or boiled rice are perfect to garnish it.

Chicken Livers and Onions with White Wine Sauce on the Blackstone Griddle
This chicken liver dish will blow you away with flavor. The crispy breading and tender liver along with the caramelized onions and white wine sauce pairs well together.
Recipe:
Package of livers
1-2 onions
Frying oil of choice
1/2 cup cooking white wine
Buttermilk (1-2 cups)
2-3 cups AP flour
2-3 teaspoons salt
2-3 teaspoons pepper
1 tablespoon cornmeal
1 teaspoon baking powder
Dash of Texas Pete (or whatever your fav hot sauce is)
Step 1 - Soak livers in buttermilk and dash of Texas Pete. I did mine overnight.
Step 2 - Remove livers and heat Blackstone over med to med/high heat. Heat on onions side, 1-2 tablespoons, and the livers side, a 1/2 cup.
Step 3 - Bread livers in flour, cornmeal, baking powder, salt, and pepper combo.
Step 4 - Add onions and season with salt and pepper.
Step 5 - Add breaded livers to the Blackstone and fry until 165° min, I like them a little higher at 175°.
Step 5 - Remove livers when done and add white wine sauce to the onions. Let thicken and remove and place over the livers.
