Easy Weeknight Lemon Thyme And White Wine Chicken Recipe
This is a great, easy, tasty, weeknight chicken dinner that makes the most of a one-pot chicken recipe! The combination of lemon and white wine is incredible, and pan frying in cast iron before braising in the oven makes a delicious tasing moist chicken with crispy skin! It's almost like chicken piccata... except different.
Ingredients
4 chicken thighs, skin on and bone in
Salt & pepper to taste
120g (about 4) shallots, quartered
½ lemon, sliced
3 cloves garlic, smashed
5 sprigs thyme
30 mL (2 Tbsp) olive oil
125 mL (½ cup) white wine
175 mL (¾ cup) chicken stock
Method
Preheat oven to 350°F (180°C).
Season the chicken with salt and pepper.
Heat a large heavy-based dutch oven or pan over high heat.
Cook the chicken for 3-4 minutes each side or until golden.
Add the shallots, lemon, garlic and thyme, getting the lemon slices to the bottom.
Add the wine to the pan and cook for 30 seconds, scraping the bottom with a wooden spoon.
Add the stock and bring to a boil.
Roast in the oven for 30--35 minutes or until the chicken is cooked through.
Serve with rice, couscous, or roasted veg.

Crispy Chicken Red Wine Vinegar Butter Sauce
A crispy chicken with an amazing tasty tarragon sauce. The sauce is made from chicken stock, red wine vinegar, shallots, garlic and dried tarragon herbs. It's emulsified with butter for that smooth, creamy buttery flavour. The beauty of this chicken is that it gently cooks in the sauce, rendering it tasty and staying juicy while the skin on top roasts into a beautiful crisp. It's quite simple to make but please buy a whole chicken and make the stock yourself. You will have plenty left over, so freeze it for your next dish. If you don't have time then cut corners, it will still be an awesome chicken. Enjoy my Crispy Chicken in red wine vinegar or as known in France, Poulet au vinaigre de vin.

WHITE WINE CHICKEN STEW has all of the flavor and none of the fuss! This chicken stew recipe is such a delicious comfort food…the perfect soup for a cold winter night! The flavors in this chicken stew are just INCREDIBLE!

INGREDIENTS:
4 slices bacon cut into 1/8” strips.
1 lb. chicken wings
2 lbs. boneless skinless chicken thighs; cut in-half horizontally and trimmed.
4 carrots peeled and cut into ½-inch pieces
1 onions diced
1 celery rib minced
2 cloves garlic minced
1 teaspoon fresh thyme minced
½ teaspoon smoked paprika
5 cups unsalted chicken broth divided
1 1/8 cup dry white wine divided into 1 cup and 1/8 cups
2 teaspoons Worcestershire Sauce
1 teaspoon kosher salt
1 teaspoon ground black pepper
3 tablespoons unsalted butter cut into 1 tablespoons sections
1/3 cups all-purpose flour
1 lb. small new red potatoes washed & quartered
Garnish: 2 tablespoons chopped fresh parsley
JUICY MEATBALLS PORK AND BEEF | MEATBALLS RECIPE
HOW TO MAKE DELICIOUS EASY JUICY PORK AND BEEF MEATBALLS PERFECT MEATBALLS RECIPE FOR THAT SUNDAY LUNCH OR DINNER.
50g Leftover bread or fresh bread
Sauce
1/2 of a Medium onion
400g Tomato purée
1/2 tsp Black pepper
Salt
1 Cup of water
1/2 Cube of beef or chicken stock or 1 tsp powder form
2 tsp Parmesan cheese
40g Red wine
2 1/2 tbsp Olive oil
Mince Mixture
300g Ground beef
150g Ground pork
1 tbsp Parsley
1 tbsp Parmesan cheese
1 Medium clove of minced garlic
1 tsp Black pepper
Salt
1 Whole egg
METHOD
-Chop the onion and set aside.
-In a pan heat olive oil on medium-low.
-Add the onion fry for 3 minutes, add wine allow the alcohol to evaporate 3 minutes.
-Add the tomato, black pepper, salt, mix well and then cover and cook for 10 minutes on low.
-In the meantime remove the edges from the bread, soak the bread in water for 5 minutes.
-Chop the parsley and chop the garlic set aside.
-In a big bowl put the pork and the beef mince.
-Squeeze out water from the bread, add to the mince, parsley, black pepper, salt, 1 tbsp Parmesan cheese , and the egg, mix thoroughly, make small meatballs put on a tray.
-To the sauce add water, stock, 2 tsp parmesan cheese, mix well and then add the meatballs cover and cook for 30minutes on medium - low heat.
-10 minutes into the cooking time, gently turn them, cover and cook for the remaining time, stir every now and then.
-They are ready, serve with pasta or with bread.
-Enjoy.
Pan-Fried Chicken in a Creamy White Wine & Garlic Sauce
This is my pan-fried chicken in a creamy white wine and garlic sauce with mushrooms. Ready in 25 minutes it makes a tasty and impressive date night dinner or a lovely alternative to a Sunday roast.
I love this for a luxury dinner served with sauteed potatoes and greens.

Ingredients for the creamy chicken:
4 chicken breasts
½ tsp salt
½ tsp pepper
2 tbsp vegetable oil
8 chestnut mushrooms - sliced
1 small onion - peeled and chopped finely
3 cloves garlic - peeled and minced
¼ tsp dried thyme - or 2 sprigs fresh thyme
½ cup (120ml) white wine
½ cup (120ml) chicken stock
¾ cup (180 ml) double/heavy cream
To Serve:
Saute potatoes
Steamed green beans
Fresh thyme
Method:
Season both sides of the chicken breasts with the salt and pepper.
Heat the oil on a large frying pan (skillet) over a medium/high heat.
Add the chicken breasts to the pan and cook on both sides until golden (about 6-8 minutes). They don’t need to be cooked through at this point – they’ll continue cooking in the sauce.
Add the onion and mushrooms to the pan and cook for 3 minutes, until lightly softened.
Stir in the garlic and thyme and cook for the 30 seconds.
Add the wine and turn up the heat to high. Bring to the boil, then simmer until almost all of the liquid has evaporated (this will take about 5 minutes).
Stir in the stock and cream and heat through for 2-3 minutes.
Turn off the heat and place the chicken breasts on 4 plates. Spoon over the sauce and serve with your choice of sides (I love green beans and sauté potatoes with this dish).
Sprinkle over the fresh thyme and serve.
