How To make Yogurt Topped Strawberry Pancakes
2 c Buttermilk complete
Pancake mix 2 tb Sugar
1/4 ts Cinnamon
1 1/2 c Water
1 c Thinly sliced strawberries
1 8-oz carton strawberry
Or vanilla lowfat yogurt Heat griddle or skillet to 375 F. Grease lightly with oil. In medium bowl, combine pancake mix, sugar, cinnamon and water; stir just until large lumps disappear. Fold in strawberries. For each pancake, pour 1/4 cup batter onto hot griddle. Cook 1-1 1/2 minutes, turning when edges look cooked and bubbles begin to break on surface. Continue to cook 1-1 1/2 minutes or until golden brown. Spoon yogurt over each serving. If desired, garnish with additional strawberries. 6 servings (12 pancakes). Per serving: calories 200; protein 5g; carb 44g; fiber 2g; fat 1g (saturated); cholesterol 3 mg; sodium 560 mg; potassium 210 mg; exchanges: 2 starch, one fruit.

Hi-Protein Cottage Cheese Pancake with Strawberry Yogurt
This delicious pancake always comes to my rescue if I've had way too much carbs that day. ???? With 36g protein, it's so filling and can easily replace your dinner! You can use any frozen berries for this recipe and top with the yummiest berry-yogurt drizzle!
TIPS for perfect pancakes:
Use a greased non-stick pan and cook on medium heat. Resist cranking up the heat to cook your pancakes faster! Medium-heat ensures they won’t burn and come out a perfect brown color.
Ingredients:
2 egg whites
30g vanilla protein powder (I use @happywayau)
2 tbsp cottage cheese
1/2 tsp baking powder
1 tbsp oat flour
2-3 frozen strawberries (mashed)
Strawberry Yogurt Topping:
3 frozen strawberries
30g greek yogurt
1 tbsp sugar free maple syrup (or honey)

1. Whisk all ingredients until smooth.
2. Make 3-4 pancakes. Use a greased non-stick pan on medium heat.
3. Mix the topping ingredients until well combined. Pour over pancakes.
4. Drizzle with more sugar free maple syrup!

If you wish to have an elegant dessert that is easy and quick to make and tastes delicious, then look no further. This dessert fits the bill perfectly! Check out Anushruti's take on 'Strawberry Yogurt Parfait' recipe.
Ingredients:
500 gm (1 pound) strawberries
2 tbsp sugar, divided
100 gm (1 cup) digestive biscuits or butter cookie
2 tbsp melted butter
200 ml low fat cream
90 gm (2/3 cup) fine sugar or powdered sugar
500 gm (1 1/2 cups) thick yogurt*
2 tbsp strawberry preserve*
1/4 tsp nutmeg powder or cardamom powder
1/2 tsp vanilla extract
6 glasses with slender stems to assemble the dessert
Method:
- Wash, hull and chop the strawberries.
- Sprinkle 1 tbsp sugar over them and toss them around a bit. Allow to rest.
- Place the biscuits in a zip lock pouch, seal and pulverize to a powder with the help of a rolling pin.
- Add the biscuit crumbs in a bowl and add in the remaining sugar and the melted butter.
- Mix the ingredients with your hands until the mixture resembles fine bread crumbs.
- In a mixing bowl, add the hung curd, cream and powdered sugar and whisk the ingredients until smooth and creamy.
- Stir in the strawberry preserve (You could use any jam or preserve. And if it is thick, then cook it with a little water over a medium flame to make it runny)
- Add the grated nutmeg and the vanilla extract and beat all the ingredients well until they are all well incorporated with the yogurt.
- Now that we have the ingredients ready, lets begin to assemble.
- Place 2 tbsp yogurt in a glass.
- Sprinkle the biscuit crumbs over the yogurt.
- Put in a few chopped berries.
- Spoon some more yogurt over the strawberries and sprinkle the crumbs over it.
- Top it up with the strawberries.
- Repeat the process for the remaining glasses.
For hung curd:
- Place 800 gm yogurt in a cheesecloth or a muslin cloth over a strainer, with a bowl underneath to collect excess water. Drain the whey for 3 to 4 hours, to get 500 gm thick yogurt.
