INGREDIENTS:
For potato salad
700 grams potatoes (~2 potatoes peeled and cut into 3/4-inch cubes)
140 grams carrots (~ 1 carrot, peeled and cut into 1/3-inch cubes)
100 grams cucumber (~1 Japanese or Lebanese cucumber, sliced)
25 grams onions (~1/8 small onion, finely diced)
1/4 teaspoon salt
80 grams ham (cut into 1/4-inch squares)
For dressing
1/3 cup mayonnaise
1 tablespoon rice vinegar
2 teaspoons sugar
1/2 teaspoon salt
2 hard boiled eggs (peeled and quartered)
Black pepper (to taste)

A classic, home-cooked dish for over one hundred years, Japanese Potato Salad is distinct because of its colorful addition of fresh vegetables, creamy texture, and rounded flavor. It's the ultimate crowd-pleaser!
PRINT RECIPE ▶
INGREDIENTS
2 russet potatoes (1.15 lb, 520 g)
2 tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) (for cooking the potatoes)
¼ cup frozen or canned corn (1.4 oz, 40 g)
1 large egg (50 g w/o shell)
1 Persian cucumber (or ½ Japanese cucumber; 92 g, 3.25 oz)
2 inches carrot (2 oz, 60 g)
1 tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) (divided; for cucumber and carrot)
2 slices black forest ham (1.9 oz, 54 g)
For Seasoning
1 Tbsp rice vinegar (If you don't have rice vinegar, I'd skip and do not use other vinegar as they tend to be too strong)
freshly ground black pepper (to taste)
6 Tbsp Japanese mayonnaise (I recommend with 4 Tbsp first, then add more if needed)

Japanese potato salad.

-2 potatoes
-1 carrot
-1 cucumber
-Corn
-Japanese mayonnaise 5 tblspoon
-Rice vinegar
-Salt
Cut the cucumber and sprinkle with salt, let it rest for 10 minutes and then rinse. Boil the potatoes in salted water, when the potatoes are cooked, mash them, then add the cucumber, carrots, corn, rice vinegar and mayonnaise, mix well and your salad is ready

-1 carota
- un cetriolo
- 4,5 cucchiai di maionese giapponese ( è più dolce di quella italiana, io ho usato la mayo’)
-aceto di riso

Uova sode per decorare
Prima di tutto tagliate a rondelle sottili il cetriolo e cospargetelo di sale per far uscire l’acqua, dopo 15 minuti sciacquatelo strizzatelo, mettete da parte. Nel frattempo sbucciate le patate tagliatele a tocchetti, e lessatele per circa 10,15 minuti,devono risultare morbide ma non spappolate,toglietele dall’acqua, e schiacciate le patate grossolanamente (non deve diventare un pure) aggiustate di sale pepe e unite la carota,il cetriolo,il mais e la maionese (potete aggiungere anche del prosciutto cotto) mischiate tutto per bene lasciate riposare in frigorifero , servite decorando con le uova sode.

How to make Easy Potato Salad
(3 people) Cook Time: 20 minutes
200g Potato, cut into bite-size pieces (7.1 oz)
50g Carrot, 4mm thick quarter moons (1.8 oz)
1/4 tsp Salt
2 pinches of Sugar
1/2 tsp Vinegar
White Pepper
1/2 Cucumber (70g/2.5 oz)
30g Ham, 5mm thick (1.1 oz)
50g Onion (1.8 oz)
1 Boiled Egg
2 tbsp Mayonnaise
White Pepper
Salt
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml
