How To make Almond Chicken with Mushrooms
1/4 cup Halved almonds
Oil Cornstarch 1 tablespoon Sherry
1 tablespoon Oyster sauce
Salt 1/2 teaspoon Sugar
1 pound Boneless chicken breast
cubed
2 teaspoons White wine
1/2 Egg white
Pepper 1/4 pound Chinese pea pods
2 Water chestnuts :
sliced
1/4 cup Thinly sliced bamboo shoots
24 Fresh button mushrooms -- OR- Canned button
mushrooms
Fry almonds in oil until golden. Drain and set aside. Blend 1 teaspoon cornstarch with 1 teaspoon water. Add sherry, oyster sauce, 1 tablespoon water, 1/2 teaspoon salt and sugar. Mix and set aside. Mix chicken, wine, egg white and 1 teaspoon cornstarch. Season to taste with salt and pepper. Heat 5 tablespoons oil in wok or skillet. Add chicken and stir-fry until no longer pink. Add pea pods, water chestnuts, bamboo shoots and mushrooms. Stir-fry 3 minutes. Stir sherry mixture and add to wok. Cook, stirring, 1 minute. Turn out onto platter and top with fried almonds.

INGREDIENTS:
375 grams sliced chicken fillets
100 grams sliced raw carrot
80 grams sliced onion
30 grams sliced spring onions
100 grams celery sliced
60 grams capsicum
70 grams frozen peas or snow peas
80 grams sliced mushrooms
50 grams chinese greens
140 grams sliced zucchini
2 cloves chopped garlic
50 grams almonds
30 grams potato flour dissolved in 400 grams water
40 grams maggi seasoning
30 grams oil
METHOD:
mix potato flour and water together and set aside. Heat Wok over high heat add oil, when really hot add chicken pieces and carrot. Stir fry continually until cooked. This wont take long. add mushrooms,peas,zucchini capsicum celery, garlic, chinese greens,and maggi seasoning. when vegetables start to wilt down add potato flour water mixture and most of the spring onions. If too thick add a little more water. toss in almonds last thing and serve with rice.

Learn how to make Almond Chicken
easy to make with lots of veggies, crunchy almonds, garlic, ginger, and of course crispy and juicy chicken. The sauce is easy too, with brown sugar, sesame oil, mirin, hoisin sauce, soy sauce, chicken broth, and cornstarch.
INGREDIENTS:
Stir Fry:
3 tablespoons vegetable oil (divided use)
1 small onion (diced)
1 cup zucchini (quartered lengthwise and sliced)
1 cup mushrooms (sliced)
1 green bell pepper (diced)
2 pounds boneless skinless chicken thighs (cut into 1 inch pieces)
4 cloves garlic (minced)
1 teaspoon ginger (minced)
1/2 cup blanched almonds (sliced or slivered)
1/2 cup chopped green onions
salt and pepper to taste
Sauce:
1/2 cup chicken broth
1/4 cup water
3 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon mirin
2 teaspoons sesame oil

Almond chicken is simply sensational. I have it one weekends or Friday nights as it's such a treat. My family and friends really enjoy it. Give it a try and let us know what you think. Get the recipe:
There are a few variations you can make to the recipe. First, you can alter the amount of almonds. I use about half a cup, but you can use more or less depending on your liking. Try to use a good quality almond, however. You can use roasted or plain depending on your liking.
In terms of the spices, you can add as much or as little as you like. For example, if you are a garlic lover, you can add more; if you are not, you can add less. You can also add the spices of your choice if you wish.
The vegetables are completely optional. I have seen many recipes for almond chicken, and the vegetables vary. These are the veggies of my choice, but you can add any kind of vegetables. In example, some egg plan or something similar might be a welcomed addition.
