How To make Mama's Chicken with Mushrooms
1 Tbls Olive Oil
2 Cloves Garlic
crushed
4 Chicken Breasts :
boneless & skinned
1 1/4 Lb Fresh Mushrooms (Porcini) julienned into 1/8

inch strips 1 Cup Chicken Broth (Preferably Homemade)
2 1/2 Tsps Fresh Mint chopped
1/2 Cup Parmesan Cheese :
grated
1/2 Cup Heavy Cream -- optional
In a skillet over medium high heat, add oil and saute garlic two minutes; add ch icken and saute five minutes on each side. Add julienned mushrooms, broth and fresh chopped mint. Cook, partially covered about 7 minutes, or until mushrooms are tender. Stir in cheese; cover and cook 3 minutes. Add cream and cook 2 minutes.

Steamed Chicken With Two Kinds Of Chinese Mushrooms 雞 蒸 香菇 (Mom's Traditional Chinese Cooking)
This is my mom's recipe for Chinese Steamed Chicken. 雞 蒸 香菇 You can use boneless chicken or bone-in chicken for this recipe. We used 2 kinds of Chinese mushrooms so this recipe is extra delicious. You will get a real delicious sauce from steaming. As well, you can steam other kinds of meats for this recipe, such as beef or pork.

STEAMED CHINESE CHICKEN
1 to 2 lbs. chicken drumsticks and thighs
1 cup sliced Chinese mushrooms
2 cups Chinese cloud mushrooms
1 tsp. salt
1 tsp. Chinese soup base
1 to 2 tablespoons cornstarch
1 teaspoon sesame oil
1 tablespoon light soy sauce
1/2 to 1 teaspoon dark soy sauce
1 teaspoon sugar
3 tablespoons sliced ginger
1/2 to 1 cup sliced green onions
Soak Chinese mushrooms for at least 2 hours or overnight. Slice mushrooms into 1/4 inch slices. Also soak cloud ear mushrooms for at least 2 hours, or overnight. Rinse. in cold water.
Wash chicken drumsticks and thighs in cold water. Put into a large dish suitable for steaming. Put all the ingredients in and mix well with a pair of chopsticks or a fork.
Put water in a large pan. Bring water to a boil. Put the dish of chicken and mushrooms into the pan. Cover with a lid and steam for 3o minutes or more. At the half way mark, use a pair of chopsticks or a fork to move chicken around so the chicken parts don't stick together. Cover with the lid again and continue steaming. In the last 5 minutes, add green onions. Cover with the lid steam for the final 5 minutes. Be careful when removing the dish from the pan because it's really hot. Serve with hot, steamed rice if you like. It's really delicious.

cooking oil for stir fry
Finish stir fry with 1 to 2 tsp sesame oil
