A buckle is a type of coffee cake with added fruit. Berries are usually added but since it is fall and pears are being harvested I chose them as my fruit. I also added dried blueberries, because I had them on hand. I also made this another gluten free recipe.

Ingredients
Pears
1/4 cup Sugar
3 medium sized Pears diced
1/2 teaspoon Cinnamon
Crumble Topping
1/2 cup Oat Flour
1/3 cup Rolled Oats
1/4 cup Sugar
A few grinds of Nutmeg
Cake Batter
1/2 cup Sugar
1/4 cup Butter
1/3 cup Buttermilk
2 cup Oat Flour
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
Pinch of Salt
Flavor! Ginger, cinnamon, nutmeg, clove or whatever you like

Lightly sweet, moist and fragrant, this Orange Almond Pear Cake is a versatile dessert that can be served at a dinner party to impress your guests or enjoyed as an afternoon treat with coffee. Made with Bob's Red Mill Gluten Free 1-to-1 Baking Flour, this cake is perfect for those with gluten sensitivities and features fresh orange zest, juicy Bartlett pears and rich mascarpone. Whip up this cake any time of year for a vibrant, flavorful treat that’s sure to please friends and family alike.
To start, preheat your oven to 350°F. Add butter and sugar to a mixer, and use the paddle attachment to whip ingredients on high speed for 5-7 minutes, until you achieve a light and fluffy consistency. Next, add in heavy cream and mascarpone at a low speed. Crack in your eggs, one at a time, into the bowl until they are thoroughly incorporated. Lastly, sprinkle in your orange zest to the batter. In a separate large bowl, fully whisk together your Gluten Free Flour, almond meal, and baking powder. Once thoroughly combined, slowly pour your dry ingredients into your standing mixer on low speed. Transfer your cake mixture to a prepared 9-inch cake pan and place pear slices over the top. Bake for 60-70 minutes or until browned and firm in the center.
Let the pear cake completely cool before garnishing with fresh pears, sliced almonds, orange zest and powdered sugar. Serve and enjoy.
