How To make Almond Butter Coffee Cake
1/4 c Sugar
1/4 ts Salt
1/4 c Shortening
1 c Milk, scalded
1/2 Yeast cake
1 Egg
3 1/2 c Sifted flour
1/16 ts Mace
1/16 ts Cardamom
Add sugar, salt and shortening to milk and cool to lukewarm. Add crumbled yeast and let stand 5 minutes. Add egg and 1 3/4 cups flour; beat well. Add remaining flour sifted with spices; then knead well. Let rise until doubled in bulk, about 1 1/2 hours. Knead down and let rise again. Shape into 2 coffee cakes and place in greased pans. Let rise 15 minutes. Spread almond mixture on top and let rise until doubled in bulk. Bake in a 375 degree oven for 45 minutes. Makes 2 cakes. Randy Rigg The Pinnacle Club BBS 812-963-9139

Sugar 90g|3/8cup
Whole egg 3|165-170g
Cake flour 70g|1/2cup
Baking powder 1tsp
Salt 1tsp
Almond meal 150g|1.5cup
Vanilla extract 1tsp
Almond flake as needed
Pan size 18cm
Bake at 180°C|350°F for 35-40 minutes

Almond Buttercake. A must have cake recipe in your repertoire. This cake recipe uses the creaming method and easy recipe to make. With any creaming method recipe, the key is mixing the butter and sugar until light and fluffy. Always take the extra step to scrape the side of the mixing bowl. Enjoy a slice of almond buttercake with a dusting of icing sugar and spoonful of whipped cream. Your next favourite cake recipe is waiting for you to try.
Ingredients:
¾ cup (170gm) Unsalted butter(cut the butter into small pieces)
1 ¾ (380gm) caster sugar
3 eggs (room temperature)
1½ tsp vanilla extract
2 ½ (300gm) cake flour or low protein flour
½ tsp salt
2 tsp baking powder
1 cup(240gm) fresh milk (let the milk come to room temperature)
1 cup(50gm) sliced almond( you can use slivered almond also)
2 tbsp icing sugar
Instructions:
1.Preheat oven at 356F/180c, line the baking tray with baking paper
2.Weight all the ingredient individually
3.Weigh cake flour, baking powder, salt and sift them. Keep aside
4.Add semi soft butter to mixer and mix for 2 minutes at low speed
5.Add the caster sugar and mix for 10 minutes at medium speed(remember to scrape the side of mixing bowl)
6.Add in the eggs, one by one (scrape the side of mixing bowl in between adding the eggs)
7.Add in half of sifted dry ingredients at low speed.
8.Genlty pour half of fresh milk(scrape the side of mixing bowl)
9.Add in the balance dry ingredients and milk
10. Add in vanilla extract and sliced almond
11.Pour the batter into baking tray, tap a few times and sprinkle a handful of sliced almond on top
12.Bake at 356F/180c for 30 minutes
13.let the cake cool on cooling tray for 30 minutes and dust with icing sugar before serving

Almond Boterkoek (Dutch Almond Butter Cake) Recipe
This upgrade of a Boterkoek, a Dutch favorite, is rich, moist and loaded with almond flavor. The simple set of ingredients and simplicity of the recipe will put this on your go-to list. Almond BoterKoek (Almond Butter Cake) Ingredients
- almond paste - 4 oz (114g)
- unsalted butter - 8 oz (230g)
- white sugar - 3/4 C (150g)
- brown sugar - 1/4 C (55g)
- egg - 1
- vanilla - 1 tsp
- almond extract - 1/2 tsp
- salt - a pinch
- AP flour - 1 3/4 C (210g)
Topping
-- egg yolk and water (for brushing top)
-- egg white
-- sugar - 2 T (25g)
-- sliced almonds - 1 C (85g)
Bake 350° 40 - 45 minutes until the top is golden brown. Cake will be soft but will solidify somewhat as it cools.

Traditional Boterkoek (Butter Cake) Ingredients
- Unsalted Butter - 8 oz + 1Tbl (250g)
- Brown Sugar (or White/Brown combo) - 1 1/4 C (250g)
- Egg - 1
- Vanilla - 1 tsp
- salt - a pinch
- AP flour - 2 C (250g)
- Topping
-- egg wash (yolk with water or whole egg with water)
Bake 350° 20 - 25 minutes until the top is golden brown. Cake will be soft but will solidify somewhat as it cools.
